BBQ Party ribs are not new but have gained popularity lately. There are many ways to prepare them. I've been testing a few different methods such as wrapping, and this one is my favorite.
These baby back ribs are sliced individually, seasoned, and then cooked hot and fast over
charcoal in ONE HOUR.
You can do this in a pellet grill or any charcoal grill, but the Weber grill has produced the best hot and fast ribs for me.

Possible to do these without a vortex? I.e. pile of coals in the middle?

Absolutely, the vortex is not required but it speeds up the process.
