Nice line up! The more of these you do, the better you will get with describing undertones. I like Mt.Etna's and celeste types, classic and proven. Cherry Cordial sounds intriguing for the same reasons you described, that one is on my list. Compliments for editing btw.

thinking of using cherry cordial as rootstock for grafting
It might be good for rootstock, as long as it doesn't die back to the ground.

Since I’m new to all the varieties of figs would you please explain what Mt. Etna types are? And this has nothing to do with the figs, but I personally thank you for chewing with your mouth closed. I’ve watched a few where the host was smacking and making noises with their mouth that make me feel like gagging.🙄
Mt. Etna varieties are figs that are dark skin, red interior, have a similar leaf pattern and all originated in the Mount Etna volcano area in Sicily. They are all very closely related. Some of the varieties include: Hardy Chicago, Takoma Violet, Gino’s Black, Sal’s EL/GS, Maryland Berry, Marseilles Black, Zingarella, Rossi Dark, Keddie, Malta Black, Black Greek, Spanish Unknown, Dark Portuguese, Salem Dark, Black Bethlehem, Papa John, St Rita, Danny’s Delight
