If you have an industrial blast chiller it's not that hard. It's what they use all the time in cooking shows, otherwise there would be no way to do like half the dishes in that time
note that the 3 days is just waiting for the rice to dry up as fried rice is normally made with dat old rice you can replicate it by spreding the rice on a tray on top of a paper sheet and let it dry on the fridge for a similar effect

Not traditional fried rice, but the way its made in China and around the world who can say what traditional is now. I say make what you want and eat what you can stomach. Also, add honey instead of sugar food a wonderful glaze and contrasting flavor to offset the spiciness. But you do you! 👍
My favorite part of this whole thing is how putting celery carrot and onion makes it “French” like it’s not an already common things to add to fried rice 😂

When I saw the episode, I was like... wait... there was poriyal in there? They just raced through it like everything else this season... And I thought -- would the coconut and dal even work with all that other stuff? How? Then I thought -- well, poriyal literally just means "stir fry" (one of many South Indian dishes where the name is the method -- e.g. vathakkal for pan/shallow fry, varuval for deep fry, aviyal for boiling, etc.), so I assumed maybe he just did something modified to make it gel better with the rest of the ingredients. And then you come along and make a pretty normal-looking poriyal and it actually worked in that fried rice?!?
Man simmilar thing happened when we made coconut rice at home We made the rice with coconut milk instead if water and cooked other part normally It give almost no smell but once in mouth it's fantastic
Its so good! I love it, thank you very much! Instead of 3 days, I did it in two because I could not wait, so I cook the rice and pork in the same day. Also i had to find the recipe for Kewpie mayo because , silly me I forgot about it. The only store that sells it close by the time I realize I needed it. I put more eggs in the recipe because I like eggs, but then I remember you add eggs to the kewpie mayo in your video, so i was worry if instead of mayo it would just taste like egg, ut luckily, it tasted amazing! I also put lots of lime because I like lime. I also cook the leftovers of the aqua pazza (The veggies and the fish) in a different pot. I did that in order to taste that with or without the fried rice whenever I wanted because frankly, it tastes amazing. I did some modifications and put some consome in the aqua pazza, its leftovers and the rice. just a tiny bit. Anyway, this rice is just too good! Oh I added mushrooms and tofu too. I think I get why Yukihira calls it odorless. For me I could smell it but the flavor whe tatsting is very powerful, so something with so much flavor should have a strong smell, I think Also in the anime Asahi's dish, is so flavorful and the smell is so strong, that the entire crowd can smell it, and judges though compare to that, Yukihira's dish barely had scent. I think he rode on that because he knew Asahi's dish would permeated the room with its scent so Yukihira called 'odorless' in other to threw them a curveball and shock them when tasting it. Because indeed its not odorless but compare to Asahi's dish it is.

Is that possible, or does it have to be a dish specifically from Japanese media?
Poriyal in my mother tongue means to fry/sautee. I used it alot to describe fried vegetable curry. We usually use a mix of black mustard seeds, cumin, fennel and fenugreek seeds as a base for our curries along with onions. Then add in our vegetable of choice. Funnily enough my favourite is a beans poriyal curry. I was surprised when it come up on Foodwars. Loved how the fried rice turned out. If I had a wok I would try it.
Pro tip: If you're trying to blister your tomatoes in oil, use less oil at first if the recipe needs more you can add it after they blister. This will prevent the splatter mess and prevent those annoying tiny grease burns
For the pork belly chefs usually go and char the skin in a pan/blow torch it before hand and scrape it off with steel wool/knife to destroy the sweat glands under the skin and even further reduce the bad odour
ah coming to this after seeing how to make sailor rations in the 18th century (Townsends channel is a nice relaxing channel on 18th century stuff), quite a bit of whiplash but looking very nice in comparison haha
not gunna lie this last season kinda sucked the donkey noodle but out of all the dishes this one peaked my interest the most. definitely gunna try this someday

I'm a student I lived on a budget. One evening, I had Canned Tuna Flakes, Chicken Sausages (few were overcooked and burn a bit on the skin), Red and Green Apple Slices, Cherry Tomato and semi-circle slices of Japanese Cucumber. All of the above mix in one big asian rice bowl. I had season it with a bit white pepper. And probably a put a spoon of Tomato sauce and half a spoon of Mayonaise. I HAVE NO IDEA what i made but I was super hungry and it taste damn good!! I just can't stop eating it till I was full.

TheJestor as Soma is cooking Megumi mentions lamb used in Turkish cuisine right after Ibusaki mentions Chinese spices, suggestion Soma was going to use it.
I think what happened is that Soma made a bunch of different dishes from the different cuisines and picked the ones he would use in his fried rice, while leaving out anything that isn't needed like the lamb he marinated
I don't know what's the problem with mayo on rice but where i came from there is a dish which is basically rice cooked in sweetened milk and as i know it that is for some native asian people a serious sin against rice, well luckily we have this guy who says we should "play" with our food. Townsend is great. There are actually a few 18th century dishes he's done that I've thought "We should really bring that back".
I'm all about his mushroom ketchup/seasoning. I even use it occasionally at work if we have any mushrooms that are about to go bad.
As half Japanese, we put condiments in our fried rice. Like Ketchup. Mayo is also condiments so its ok. a-ok.

One evening, I had Canned Tuna Flakes, Chicken Sausages (few were overcooked and burn a bit on the skin), Red and Green Apple Slices, Cherry Tomato and semi-circle slices of Japanese Cucumber. All of the above mix in one big asian rice bowl. I had season it with a bit white pepper. And probably a put a spoon of Tomato sauce and half a spoon of Mayonaise. I HAVE NO IDEA what i made but I was super hungry and it taste damn good!! I just can't stop eating it till I was full.

Lamb was used in Cross knives fellas dish, Yukihira went with differing ingredients in his final dish, but from the same set of regional cuisines.
TheJestor as Soma is cooking Megumi mentions lamb used in Turkish cuisine right after Ibusaki mentions Chinese spices, suggestion Soma was going to use it.

I think what happened is that Soma made a bunch of different dishes from the different cuisines and picked the ones he would use in his fried rice, while leaving out anything that isn't needed like the lamb he marinated

I don't know what's the problem with mayo on rice but where i came from there is a dish which is basically rice cooked in sweetened milk and as i know it that is for some native asian people a serious sin against rice, well luckily we have this guy who says we should "play" with our food.

That's because the actual chef that made the dishes for the show had a baby or something and wasn't able to help out anymore so the crew just had to wing it or something. At least that's what I read somewhere.
