Just got my first immersion blender and decided to make apple sauce for the first time too. First video was some lady putting in cinnamon sticks and I wanted measurements! You have them and I appreciate that. 🎉

Applesauce is just one of those things I never thought about making from scratch until I got an immersion blender with an attachment that says it's for either mashed potatoes or applesauce... so I'm gonna give this a go!

If you use a Bramley Seedling - head and shoulders the best apple pie and apple sauce variety in history - you will not need to use a hand blender since that apple's flesh purées naturally when heated. Lemon juice is not needed either since the flesh of the wonderful Bramley is naturally sour.
If I have soft apples that I think will bruise if I try to peel them with a peeler and I'm not good with a paring knife, can I cook the apples in slices then pick the skin strips out after the pulp is cooked and purred? Will cooking the skins negatively affect the flavor (bearing in mind that I don't generally eat applesauce and am pretty open flavor-wise)?
