    FAUJI MUTTON CURRY
    Preparation time 15 minutes
    Cooking time 35-40 minutes
    Serving 4
    Ingredients
    For Marination
    1 kg Mutton (with bone) , मटन
    2-3 medium Onion, sliced , प्याज
    Few Mint leaves , पुदीने के पत्ते
    2 inch Ginger, chopped , अदरक
    6-8 Garlic cloves , लहसुन
    3-4 fresh Green chillies , हरी मिर्च
    ½ tsp Salt , नमक
    1 cup Curd , दही
    2 tbsp Coriander powder , धनिया पाउडर
    1 tsp Turmeric powder , हल्दी पाउडर
    1 tsp Degi Red chilli powder , देगी लाल मिर्च पाउडर
    ¼ tsp Cumin powder , जीरा पाउडर
    For Tempering
    ¼ cup Ghee , घी
    2 Black cardamom , बड़ी इलायची
    3-4 Green cardamom , हरी इलायची
    8-10 Cloves , लॉन्ग
    12-15 Black pepper corns , काली मिर्च के दाने
    1 Bay leaf, तेजपत्ता
    2 inches Cinnamon stick , दालचीनी
    3 medium Onion, sliced , प्याज
    Marinated Mutton , मैरीनेट किया हुआ मटन
    Water or Stock as required , पानी जरूरत अनुसार
    For Green Paste
    1 cup Coriander leaves , धनिया पत्ता
    ½ tsp Sugar , चीनी
    1 tbsp Oil , तेल
    1-2 fresh Green chillies , हरी मिर्च
    50 ml Rum (optional)
    For Garnish
    Fresh Coriander leaves , धनिया पत्ता
    Process
    For Marination
    Firstly in a mortal pastel, roughly crush ginger, garlic, green chillies, salt and set aside.
    In a bowl add mutton, sliced onion, mint leaves, crushed ginger-garlic-green chillies, curd, coriander powder, turmeric powder, degi red chilli powder, cumin powder and mix everything properly and set aside overnight or at least 1-2 hours.
    For Tempering
    In a heavy bottom kadai heat ghee then add black cardamom, green cardamom, cloves, black pepper cons, bay leaf, cinnamon stick and let it crackle.
    Now add sliced onions and saute until browned properly.
    Then add the marinated mutton and continue sauteing for 5-8 minutes or until the mutton has light brown coloured.
    Add water or stock then cover and cook for 20-25 minutes or until the mutton is 80% cooked.
    Remove the lid and stir it properly then add the prepared green paste and continue cooking until the mutton is cooked completely.
    Serve hot and garnish with fresh coriander leaves.
    For Green Paste
    In a grinder jar add coriander leaves, sugar, oil, green chillies and grind it into a coarse paste and set aside.

    Hello Ranveer Sirjee - I tried this over the weekend, and this is probably the best recipe by far!! My father loves mutton, but is very particular about the taste. As soon as he tasted the mutton, he was so happy; he smiled, and said - "this reminded me of the best mutton I have ever had - the first time that I had it in Jalgaon, when my father brought it and I started eating mutton since then." ...and he after a long time, had a hearty dinner. I must tell you that my mother left us in April due to post Covid complications, and my father has since been very somber and keeping it to himself - we have been trying to get him back to normal life, but have been struggling. This brought joy to his face and we all felt so good about it - thanks so much to you for this recipe - this gave us a recipe to bring some joy to my father - cant thank you enough sir. He typically doesnt eat nonveg for the second time, but this time, he asked himself, if there was any leftovers, and relished it again - in the same way! THANK YOU AGAIN !!

      Bada Khana is basically a feast organized on special day such as National Holidays or Raising Day of that particular core/regiment. Soldiers and their families feast together and there is lot of celebration.

    This reminds of the mutton I had when my father was in the Army. Especially the langar Bada Khanas.. Nostalgic!..spicy mutton curry with puri.. what a delicious combo..the taste is something else. One has have the mutton curry cooked by our Jawans! ..you can't find it anywhere..
    Going to make it today... hope I get the flavour right. Going to make in the earthen pot.. I normally cook mostly all my nonveg dishes in an earthen pot. I agree the flavour comes out spectacularly!

    My father is currently serving in army as subedar and when his posting was in base area we all lived together in army quarters , and once or sometimes twice in a month BADA KHANA was being organised and we used to enjoy it . Not even mutton but even the veg items are mouth watering .

    I stopped eating mutton a few months ago, ever since I lost my brother (who made the best mutton in the world!). This recipe reminded me of him and the way he used to say “nice” while cooking. I don’t think I’ll ever eat mutton again but thank you for bringing back a happy memory of my brother. :)

    I tried this recipe yesterday. It came out so well and most importantly I enjoyed making it. My family loved it and 1.5 kg mutton within 4 people finished with not a morsel left. Thank you for simple recipes. I enjoy making them.

      Dang! I read this on feed today and I can't thank chef more than anything for mentioning or even thinking about something so relatable! It's been 3 years since I moved out and believe me I heard Bada Khana after so long!! Paltan ki yaad aagayi. Aur kuch snack ke dishes ka bhi zikar hota ya aap in future unko banake dikhae toh maza hi aajega.

    I went an NCC camp in an army base in MP and in the last day of the camp they had a bada khana and there was music dance camp fire and the food was magnificent, proud of indian army

    Boss. Thoroughly enjoy your cooking projects. Specially this one took me to 1988 when I lived in Gauhati for a year for software development. During weekends we frequently used to go to military barracks on the Meghalaya border to buy cheap rum and whisky and they used to cook rice dal bhaji and mutton curry on Sundays. Bharpur Khana for around Rs 8. Seating on the balcony facing the mountain and enjoying this mutton was heavenly. Thanks for sharing the fauji mutton recipe with us. Very nostalgic.

    It always saddened me how we have forgotten storytelling to such an extent. But Chef Ranveer to me is one of the most beautiful storytelling chefs that I know of. It is what keeps one stuck to watch his videos (ofc the recipes too) and the love that goes along with cooking, reflects too, I guess that's the perfect blend of teaching; storytelling, love, and passion.❤️ thank you chef for all this teaching💖

      HI can you tell me how much salt you added after adding water for curry at first salt is only used for marination and after that I dont see him adding any more salt, i believe salt will be needed for taste after adding water.

    My own Thumb Rule:
    1. Never use pressure cooker instead use low flame for longer period of time.
    2. Use more onion than what's shown, also use little sugar to caramelize onion.
    3. Put whole Garlic cloves as well.
    4. Always use Mustard oil and ghee while serving.

    Ohh god😍 exact way my dad use to makes mutton . He always said about one of their madrasi chief , he was one of the fvt. chief for my dad, From whom my dad learned to make mutton . He always talks about all the items , about his memories of dinner party , those occasion . I love to hear . Now, he is an retired army soldier. ❤❤. And sever 8+years in Punjab . After that almost each states. I always proud on him ❤.
