- LAAL MAANS/ MAAS - Ever since I visited Mathania some years ago, my relationship with chilies grew even stronger. I tasted this Laal Maans curry at Jodhpur and the simple recipe completely won my heart over. Try this recipe this weekend and let me know how you like it.

LAAL MAANS
Preparation time: 45 minutes
Cooking time: 45-60 minutes
Serves: 02
Ingredients
For Marination
1 kg mutton, curry cuts, मटन
2 tbsp ginger garlic paste (70% garlic + 30% ginger), अदरक लहसुन का पेस्ट
For Gravy
¼ cups ghee, घी
2-3 cloves, लौंग
10 black peppercorns, काली मिर्च
2 small cardamom, छोटी इलायची
1 big cardamom, बड़ी इलायची
250 gms onion, sliced, प्याज
marinated mutton
Salt to taste, नमक स्वादअनुसार
20 mathania chilli paste (use soaked chillies), मथानिया मिर्च पेस्ट
200 gms curd, beaten, दही
1.5 tbsp coriander powder
1/2 tsp red chili powder
2 tbsp mustard oil
Process
● In a mixing bowl, add mutton, ginger garlic paste and marinate well as keep it aside for 1 hour.
● In a large saucepan, heat ghee and splutter peppercorns, green cardamom, black cardamom and saute well.
● Add onion and saute till translucent, add the marinated mutton and saute for 4-5 minutes.
● Add salt to taste, mathania chilli paste and saute well for 4-5 minutes to remove chillie’s rawness. Cover and let it cook for 30 minutes.
● Add in the red chili powder, coriander powder, and mustard oil in the curd and mix ,cook for until mutton becomes tender.
● Serve with roti.

This is one of the best recipes for Lal maas on youtube. The most important part of making Lal maas is that the mutton needs to cook to almost 50% just with the mathania chillies. The caramalization of the mathania chilly along with mutton is what brings about the authentic flavour of Lal maas!! And that's what he did. He added curd along with other masale only after the mutton was cooked up to 50% just with chillies. Many other recipes on RUclips tell to marinate mutton with red chilly paste, dahi, masale, etc. That dish is also tasty but thats more of normal mutton curry and does not bring that original flavour of laal maas!!

Quick update for you Ranveer, Mathania does not grow chillies anymore due to lack of water. I was in that area and went there to find out. You do get other red chillies which are also good. Locally grown Dhaniya and Jeera are of very good quality.

Recipe is very simple, jungli maas banna ne knliye shikari hamesha ghee aur mirch sarh rakhte the jesa ranveer ne bataya iss video mein jo bilkul sahi kaha hai. Seriously iss maas ko banane ke liye sirf ghee aur laal sabut mirch hi chahiye, mirch ko sillbutte per pees kar maas ko marinate karke thodi der rakhte hai fir ghee ke chok mein ekdum dheemi anch per 1 se 1.30 ghante dhakk kar pakate hai laal maas tayyar hai aur instant chulhe par paka hua junglee laal maas kya swaad banta hai ap log bhi try karo iss se jyada asaam aur kuch nai banta friends.

Hello Ranveer I tried the recipe but there is this sharp chili punch when you first taste the mutton the burning sensation get away after sometime, but as suggested by you mathania should'nt be taste spicy .... anything I missed

I was curious about the use of Kachri as one of the most significant ingredients in Laal Maas.I don't mind the idea of using yogurt instead of Kachri because yogurt, besides sourness, adds a creamy texture in the end. However, when I talked with Rajasthani villagers about Kachri and Laal Maas, they always pointed out a special texture and aroma induced by it. Thus, whether Kachri or yogurt remains a question! Anyway, great presentation!
