I love your recipes Chef Ranveer. They are well researched, and impart a very fine flavor, exotic and exquisite. I made your Palak Paneer and it was the best I ever had. This one looks like another winner. The addition of mace is something new and will give an undefinable scent, a sharpness to it. I would never have guessed. Also the addition of khoya or evaporated milk, I can see how that enriches the curry with its slightly caramel flavor of milk lactose sugars roasted and concentrated. By the way, to keep this healthy, viewers should note that there are 2 forms of jaggery (gur in Hindi, Bengali): sugarcane 'gur', and date palm 'Patali gur'. White sugar has a glycemic index (affects your blood sugar and gives diabetes) of 65 GI, sugarcane gur is very high at 85 GI, whereas Patali gur is only 35 GI! The taste is similar, so use Patali Gur for sweetening instead. I think the addition of this gur is just to mellow out the curry but not to the point of being a sweet dish. I usually use honey but gur is better.
I tried this yesterday and it came out really nice. Very flavourful, rich yet mild on spices. Family loved it. I wish I could share the picture here. Thankyou Ranveer 👍👍👍

Ranveer sir aap bahut hi desi insaan hain, aapk baat karne ka tareeka bahut accha lagta, aapki har recipe bahut jhakkas hoti hai, aapne jo matar nimona banaya tha use dekh apni mummy yaad aa gayi humare purvanchal me aise hi banaya jata hai, hum teeno sister aapki recipe bina skip kiye hue dekhte hain❤
Ranveer Paa ji, Today I made maharaja chicken curry 2.5 Kg. instead of Maharaja mutton curry. From some experience & tips/ advice your earlier various recipe; I made some small changes. I.E.; for E.G, I made the ratio of G. Cardamom : Black Cardamon :: 2 : 1 ( instead of 1: 1) . Then I used Mawa (grated) b4 Dahi and also use little bit of Khas-Khas (Posto). I used 25 pcs Cashew & 25 pcs Almond (light fried) paste. Little bit of G cardomom powder along with Black Cardamom powder & black pepper powder. While diluting the thick & rich gravy i used 1:1 Amul Gold milk & Water. Gurh used was mixture of Ganna Gurh & Nolen patali gurh. Although I don't have a Copper Handi ( thick bottle) like you used. I used Non Stick Degchi ( big size) but the Red Glossy colour of thick / rich korma gravy on even (black background of) nonstick handi couldn't camouflage the rich reddish colour. Even Adrak- Lasun paste the proportion was Lasun: Adrak= 65 : 35. At end after giving the charcoal smoke ( after Kaju paste) i gave some lemon juice. 1 tsp of Kewra & gulab water & garnish with pyara Dhaniya leaves chopped . 😋🤤😋 It waz Yummy^infinity. Kaash Main Aapko taste karwa pati. Bachhe log (bara wala class 12 & chotta wala class 7) khake ungliya chat-chaat kar enjoy Kiya, aur aapko bahut thanks kaha. Bahut hi badhiya, khandani recipe, but very easy to make. Aaj main taste kiya par khaa nehi payi. Khana pakaane ke baad bhuk mar jati hai. Kehte hai " Ghra-nena Ardha-Bhojanam". Lekin kal zaroor khaungi. Aise recipe ka taste waqt ke saath aur nikharta hai, aur lazzat dar banti hai. Once again thanks to you for this wonderful, delicious recipe. Only seek small advice, that although I made some changes of my own to make Maharaja Chicken Curry, However Aap agar Maharaja Mutton ke badle Mah.
