- Although I've made this dish many times and may different ways over the years, this is the first time on the Blackstone Griddle. This Marinated Chicken Fajitas recipe is one of my favorite Mexican recipes on the Blackstone Griddle.. Sounds good, doesn't it? I hope you'll give this recipe a try and feel free to change it up to fit your tastes if you would like to. Let me know how it comes out! Ingredients Needed:
- I used 3.5 Lbs of chicken breast sliced into fajita type sized bites
- 3/4 cup of olive oil (adjust to recipe)
- 2.8 Ounces or two standard envelope packages of your favorite taco/fajita seasoning
- 1 teaspoon of garlic powder
- 1/2 teaspoon of jalapeño powder (you may remove this or substitute if you don't have) I used Legend Brand
- 1/2 cup of salsa verde or tomatillo salsa
- Juice from 2 limes
- 3 bell peppers (sliced)
- 2-3 large onions (sliced)
- 2 tomatoes (sliced)
- 3 jalapeno peppers (cut) you may use less or none if you don't want it spicy
- Corn or Flour Tortillas
- Cheese (optional)
- Hot sauce (optional)
- Cilantro (preferred)
Directions:
- WASH YOUR HANDS!
- Prepare your marinade as per the video
- Combine your marinade with your sliced chicken into a one gallon ziplock bag or food saver it
- Allow chicken to marinade in the refrigerator for 24 hours
- Preheat your griddle to medium high heat
- Once griddle is ready, begin cooking your veggies
- Once veggies are half done (to your liking) move them to the side on low heat
- Place chicken onto griddle and move frequently until cooked
- Combine chicken and veggies and stir frequently until everything is done
- Remove from Griddle, build your fajita and EAT!!!!

You gave me a great idea as I am going camping this weekend. I usually do pico de gallo and hot Mexican stone salsa and steaks but I needed a second meal for the next day...fajitas!!! Super easy and tasty. I have the smaller Blackstone griddle.

I can smell the marinated chicken fajitas from here, great work man! It looks cold there, like below 0 cold, you are going to have to put hot sauce on those fajitas to keep you warm! Every New Year's Day I grill out and I don't care what the hell the weather is like because.... whether it's snowing, windy, or rainy---I'm out in my yard. Admittedly, it is much harder to keep the charcoal blazing when nature's tears keep trying to douse it. You've given me an excellent idea for something different but still tasty to grill. What temperature do you put the griddle at? How much oil do you use? Doing chicken and shrimp. Everything is marinating going to try them tonight! Looks delish!
Just enough oil to cover. Medium heat will do fine.

SaepeExpertus Hi! I cook on med-high heat usually unless i’m just trying to keep a food item warm and then I cook on low on that particular burner like I did with veggies at the end of this one on the right side. I do have a cleaning video on the griddle in my video list just take a look for it.

Bro.... That hot sauce is HOTTTTTT 🔥 I just bought myself a blackstone finally and I was going to season it today, but I got too excited about it and put it together and seasoned it last night... And the thing I noticed about it right away was how much heat it gives off... even on a cold night like the one in your vid, the griddle definitely helps take the edge off... And I'm gonna make fajitas for my first cook on it tonight. Thanks for the inspiration, happy griddling!

Everyday BBQ ok so here's my verdict:
You're right, I love it. Lots. I took it a step further and I made steak AND chicken. We used diced boneless thighs and I went and had my butcher shave a couple ribeye steaks for me. And if you were looking for cheep and easy grill lids for steaming the veggies, I went to Dollar General and got some cheap 9" baking pans, then fastened some handles for cabinet doors with some JB Weld. The food was restaurant quality and I wish we could post pictures in the comments section. Also, clean up was so easy, I'm just waiting for the griddle to cool off so I can put the cover back on.

Thanks, Lasse! I haven’t had any issues thus far. That Griddle top is thick! I was missing cilantro in my marinade but it was still awesome!
Everyday BBQ Thanks. I think its really no worries either, but you never know. I did warp the lid of my concrete cooker last time, but thats aluminum and i think the heat rose too quick. Lesson learned..
I can remove the griddle top on my gas grill so i keep it inside so that should make the difference less. Besides its not that cold here today, just under freezing.
But thåen again i do not know if i am to make cheesesteak sandwiches or just steak lol

Hey Mike, how do you determine when the chicken is done? I always seem to overcook chicken pieces.
When it’s cut into pieces like this I’ll usually just rip a larger one in half and make sure it’s visually cooked through.

I always cook on med-high for the most part. I do keep the fat right burner on low to keep food warm.
