I went by the restaurant on Saturday afternoon and the tacos were incredible!!! I came down from Sacramento just for the tacos (and my parents, don't tell them!). The Korean short rib and Kelly's shrimp were awesome!!!!!

Chicken Fajitas are one of my favorite dishes. I used to marinate then in Tequila Blanco, Fresh Lime Juice, Garlic, and a little hickory smoke. I also have marinated them in Hickory Smoke and Italian Dressing. I haven't made fajitas in quite some time, though. Also, I recommend cooking them first and slicing them to serve. The chicken won't dry out as badly.
I didn’t have onion the other day so I used shallot. I will now forever use shallot instead of onion in my fajitas. (I added the peppers first and cooked the shallots MUCH shorter than the peppers) SO good.
