Griddled Fajitas with a side of Street Corn

  • People are always asking me for easy, weeknight meal ideas. Cooking fajitas using marinated meat from local Mexican meat markets plus an easy side of street corn is one of the fastest, tastiest meals I can make my family. If you do not have access to a Mexican meat market you can create you own marinade.
    We can never agree on beef or chicken, so we make both in this recipe. Specifically on the chicken, I prefer thighs because of the flavor ad juiciness. In this recipe we griddle the fajitas, which can also be achieved by cooking in a cast iron skillet. Alternatively you can also directly grill this recipe.

    Pro tip! With the Cacique crema, don’t peel the seal off. Just stab a hole right in the middle (I use a chop stick) and use it like a squirt bottle! Keep up the great work!

    Loved this and it's so timely. I don't have a cast iron flat top but I do have a stainless steel Little Griddle that fits on my large gas grill and we've been wanting Fajitas so with your guidance, it's time to try it.

    Love it Bro gonna try it this weekend. I have almost all your seasonings and will never again go back to any other they are truly unbelievable !! Everyone in my family loves them. Just did pulled pork for Thanksgiving like you did with Ole Boy Honey Hog and Honey Hog hot and the fat separator. Everyone loved it and the Meat Mitch sauce. My man keep it up please!!     Fajitas on a griddle is such a quick meal and fan favorite. Love the Fajita seasoning. I use it on a lot of dishes. The elote side is delicious. I thought you were going to sprinkle some on the taco :)

    Thanks Matt love your videos. Been on a keto diet and loving your non sugary recipes lately. I cooked the Mexican pulled pork and your Texas ribs this past weekend and they were wonderful. Your fajita seasoning is the best I’ve ever had look forward to trying this out.

      Love it. BTW, I know everyone reacts different on Keto, but even when I use my rubs with sugar when I did keto, it didn't affect me. The sugar cooks down so I guess that helps. Cheers!

    H.E.B. also has "mi tienda" branded tortillas in refrigerated section. Their raw just as good as the freshly made ones there, beans and pre-seasoned fajitas as well. Hard to beat Mexican grocers pre-sesoned though.

    Michoacana is good but here in Lubbock we have Amigos United Supermarket and they have Fajita norteña and tablitas (cross cut ribs) norteña, and they are amzing!!!

    A bit off topic but what makes me somewhat proud as a UK citizen, is that all you good barbecuing people seem to use the thermapen which is a small UK company based not far from where I live on the south coast. I got one with my Traeger (a great US product)!

    Hey Matt, I freaking love these videos so much. I am going to move to an apartment for the first time in my life, could you make a video on BBQing in limited spaces like an apartment? What equipment one would need and things like that. I have a patio but I know I won't have much space for a big Traeger, even though a Traegar is what I'd love. But I will have some room at least outside.

    As always, excellent recipe vid!!! Grew up with my moms/grandmas homemade tortillas and eventually to my chagrin became a tortilla snob, but honestly...as far as store bought or even authentic restaurants, it's so difficult to beat the value and deliciousness of HEB homemade tortillas! And that combo of crema, butter and cotija cheese on the elote is 🔥🔥
    P.S. I went to a Powerlifting competition in Frisco a couple weeks back, traveling from Bandera, TX and to my surprise your store was relatively so close to the highway. Unfortunately due to the long day trip and start time of the meet, I didn't have time to stop and was so bummed! Had I known I would have left even earlier! Will have to make a time for another trip up there. We go through your seasonings like crazy! Thankfully Tractor Supply sells a good few, maybe one day HEB? 👀We still make online orders though! Reminds me to do one right now 😂need voodo and holy gospel 🙌

    Pro tip: Instead of using butter, throw some diced up bacon on the griddle. Once the bacon is almost done throw the corn on. Mix together.

    Do they normally use crema in elotes in Texas? Up here in Chicago it's mainly mayo, parkay, and cotija with chili powder. Still looks great either way!

    Man...I really need to get a griddle! I've been out of work for 3 months and I haven't been able to get one. Can't wait for when I can. Also man, you keep doing you! Haters gonna hate! I love it when people can't use common sense. I really hope people would know that you wouldn't use the same spatula for everything. Good grief. But anyways, fajitas is my wife's favorite meal and she prefers thighs, just like me, so we will go that route. She can't have corn, but the rest of us can, so we are good to go there. Loving the griddle series and when I get one, it will be viewed on the regular! Good stuff man. With me being out of work, I've looked forward to these midweek videos and I've gone back through some others over time as well. You've inspired a few new ideas for me and my family.

    Question:
    Can I smoke a pre-cooked roast? We don’t have time to smoke the whole thing before Easter dinner, so I thought I’d cook it the day before and then throw it in the smoker on Sunday to give it some flavor.

    No doubt the marinated meat is good, but many times you can ask them to make it "preparada" and they have a lime juice style marinate that is pretty bomb too, gotta cook within a few hours though from picking up. I make my own carne asada marinade w/ lime juice, orange juice, sliced onions, cilantro and a bit of worstershire sauce. Tenderizes the meat and comes out very tasty!

    I like the Flatrock, but can’t justify the price. I currently have an Egg and thinking about getting a SizzleQ to try some of what you’re doing. Recently bought some of your rubs: Gospel, Cow and Voodoo. It’s all good stuff. Appreciate the AARs! Forget the naysayers

    Can you please make ham burnt ends (maybe with a coke/brown sugar/mustard glaze) and for the side a loaded baked potatoe salad (potatoes/mayo/sour cream / cheese bacon/ green onions. So good cold but even better hot and would probably be over the top smoked! I don’t have a smoker yet lol

    This looks fabulous! I remember as a kid going to a Mexican restaurant and ordering the fajitas, you felt like a boss! You could hear it sizzling as they brought them out from the kitchen in that screaming hot cast iron pan. I don't have a flat top, but I am going to buy a cast iron griddle for my Traeger so I can do this at home. Thanks for all you do.

      I’d ask the butchers there. Not all Costco warehouse’s sell the same stuff and you never know when they’re gonna have it.

    Proper marination is the key. If you don't have access to a La Michoacana or an equivalent, you are looking at a lot more work in preparing the marinade etc.
