Făgăraș is my home town and you have been to the best place in town regarding food quality. I think you'll need an entire year to travel throughout Romania and learn and taste the cuisine. And I bet you won't get bored! There are different varieties of the same dish and you'll find those gems all around the country.
You should also try mamaliga cu branza si jumari, papricas de pui, paine de casa, cozonaci, placinta pe vatra, carnati de casa afumati, ciolan de porc cu fasole, pastrav, cioba de pastai/cartofi/varza cu afumatura, tocanita de ciuperci, supa de pui etc.. But in order to have these things as tasty as possible, you need to go to a traditional transylvanian village and not some random restaurants. Dont get me wrong, there are good restaurants out there but what is made at the country side is better :)
We like the sound of the food in Transylvania, very different and looks very tasty. We love rice pudding, so that would definitely be top of our food list.
Greetings from the north of Transylvania. The light green chili peppers (Ciorbadjiski, bulgarian peppers, as we usually call them in Romania) are semi-hot. When they are green, they are even milder (they are orange when ripe). For a hot pepper try a dark green one (or the ripe small red ones, Cayenne, also very popular in Romania, at least Transylvania). Great video, very nice the opening with Bach's Toccata, and if you'll ever come again in Transylvania, you've tasted about 1% of what it has to offer.
I LOVE stuffed cabbage! I think I've always equated it with 'budget' food for some unknown reason. Maybe because cabbage is inexpensive or something... but the presentation of the Romanian version looks fantastic. I'm going to try to look this recipe up, thanks for sharing.
I once saw a cooking show where Jacques Pepin made a French version of stuffed cabbage. Turns out the French hollow out the entire head of cabbage, stuff it and rewrap it. It was a cool presentation.
Sorry, my southern roots are showing. What I meant is I loved stuffed cabbage 'rolls' , but the Romanian Cabbage Rolls which also appear 'stuffed', look especially tasty. And I'm sure have much more interesting spices and ingredients.
My great grandparents were Saxon-Germans from Transylvania/Siebenburgen, so I am anxious to try some of these dishes from the 'old country,. Thanks for sharing these foods with us!

I'm sure there are some options in larger cities like Bucharest or Brasov but, generally, it can be challenging to find vegan options in Eastern and rural Europe. We've heard a joke about Serbia, numerous times: "A vegan walks into a Serbian restaurant and tells the server that he/she is veg. The server then replies: Ok, will you have chicken or fish?" 😀
Even though most Romanian dishes are based on meat (pork, lamb, beef, goat, poultry, fish, game), every restaurant most likely has vegan dishes. There is a trend now in salad bars and any important city has a lot. Also, most Romanians are Orthodox and have four major fasting periods, before the Christmas, the Easter, the day of St. Peter and Paul and the Dormition of the Theotokos, when it is recommended abstention from meat, eggs, milk and other animal-related dishes, as well from alcohol. During this fasting periods, a significant number of Romanians would eat only vegan food, most often soups and salads. It's long since vegans were considered bad hunters.
We do have vegan dishes as well. Mainly soups and stews, but the eggplant salad they had in this video is also vegan. We've got pilaf with mushrooms and peppers, tocană de cartofi (potato stew), varză călită (a cabbage dish), fasole (beans stew), mâncare de mazăre (green peas stew) and lots of veggie soups. But you need to keep in mind that all of these dishes can either have meat or no meat, you just need to read the ingredients. And you can find more processed types of vegan foods in our supermarkets during the fasting periods, but I wouldn't necessarily recommend those. You never know what types of chemicals they put in there. Oh, and if you're lucky to get here during the summer/ beginning of the Autumn you'll find plenty of fresh, delicious locally grown fruit and veg.
And if you come during the winter you can try our preserved foods, such as "zacuscă", "aperitiv", etc. And the pickled veggies, we pickle almost everything.
Romania is not only Transylvania! It stretches E to the Prut River and SE to the Black Sea. I hope that the Carpathian Mountains will not be too much of an obstacle for you and that you will have the curiosity to discover those areas as well. Bonus : They taste different food. 😉

Was it sour? Looked to me like a typical Transylvanian soup. They don't make borș there. In order for it to be borș, it has to be made with a sour, fermented bran liquid, also called borș.
They are not gonna suck your blood. They may try to suck your money, however. Try to stay away from touristy joints. The soup was ciorba-tastic! The cabbage was sarma-licious! La revedere! What, no mamaliga!
Always try to eat where to locals eat. Never go to places that scream "tourism", like Dracula Restaurant and things like that. There are no real Romanian dishes, most of them are borrowed from neighbors. Sarmale is Turkish. Sarma actually means Wrap in Turkey. Polenta...we all know where corn was first discovered and when, so I believe we can all agree it's not a Romanian dish. Romanians just add their own twist to some dishes and make it their own, but if you wanna cook Romanian food, just add simple and fresh ingredients, salt and pepper and that's about it. Use a lot of pork, pork fat, sour soups, sour cream, garlic and you are a Romanian cook :). I'm glad you two like the food here, but you must try the Romanian liquors (tuica and palinca) and the home-made smoked sausages.

Once again, these are things that our server (who is Romanian and lives in Fagaras) told us and we know garlic when we taste it.
The sour products go well with strong drinks.
