    Kimchi paste and kimchi are different. Kimchi is the dish which means its already made. Kimchi paste is the chilli paste you use to ferment the cabbage. So if you blend kimchi its gonna be different

    Thanks for the recipe, look yummy. For the batter you should try with fresh ginger et potato starch way more cryspier than corn starch. And for the sticky sauce here's mine : fry 4 garlic cloves minced and dried red chili pepper in 2 tbs of oil. Add 1/4 cup of soy sauce, 1/2 cup of rice or corn syrup, 1tbs of rice vinegar, 1tbs of Dijon mustard, bring the mixture to boil and finally add 1tbs of brown sugar. Then cover your fried chicken with this delicious sticky sauce, Enjoy !

    A Korean told me the secret to their chicken was coating it in potato starch instead of flour.

      it's not actually flour that they used, it's called corn starch in the USA, but in the UK we call it corn flour, I'm not really sure why.

      ShaunshankRedemption You are using a subsitution. Potato flour can be found in most Asian markets in America. I have some in pantry now. A good sub is also instant potato flakes

      yeah, i just wanted to clear it up for anyone who didnt know. We use a lot of misnomers around food in the UK, and it can get confusing, especially if english isnt your first language.

    In Chinese language, there's a word means 'grab the crisp' it's a term for cooking. Which is frying things the second time to make food extra crispy and stay crispy when it's cooled. Frying food twice is very common in Taiwan. If you guys ever tried stinky tofu. They are amazing x

    I never knew Korea had such a massive fried chicken (and beer) culture until I moved here. There's a shop on every street! There's actually more fried chicken places than all the fast food (there's quite a lot! KFC, McDonald's, Burger King, Taco Bell, Korean style fast foods, etc) joints. And this recipe looks great. Hope you guys can come to Korea and try all the different varieties of fried chicken!

    That's Gochujang, a fermented chilli paste. Kimchi, predominantly known as the fermented Chinese Cabbage, is incredibly watery, and if blitzed up it will have more of a Tabasco consistency rather than the thicker Gochujang.

    후라이도 치킨! Definitely... Nothing beats Korean fried chicken. Once you had tasted one.. You can never say you had anything else any better. Hence KFC isnt really packed in Korea. Hardly anyone goes into KFC when you can easily buy chicken almost anywhere.
    But! The best combo for Korean fried chicken is beer (maekju 맥주). Koreans call it the chimaek ( chicken & maekju) combo. Please try it Sortedfood and everyone else!

    What is Kimchi paste???? I am Korean, never heard of it but would like to try. We normally make the sauce with Gochujang.

    For even more crunch potato flour is better than corn flour.
    One is a grain flour and one is a root flour. I guess that makes some kind of difference but I definitely notice more crunch with potato flour.

    Can you guys perhaps do a ddeokbokki (tteokbokki) video? It's a common street food in Korea... basically rice cakes, fish cakes, veggies and boiled egg (adding Korean ramyun noodles are a nice touch) in a spicy sauce. I can't find them where I live, so I miss the taste.... I want to see your take on it!!

    I don't use any flours for Korean fried chicken. I use the corn starch, it will give a very nice crisp and it'll be crispy for a longer time than kfc chicken. Other than that I agree with everything that y'all used in this episode.

    Try checking on Philippines Fried Chicken, even though I lived in Korea for 4 years, all the Filipinos used to eat it every day and kept on saying it's not that great :D. Definitely one of Korea's fav foods.

    Ooh by the thumbnail i thought you guys went full on traditional and also fried gizzards (or 닭똥집) as well! But it was just the cubed pieces of chicken thigh 😝 Never heard of blitzing Kimchi before... but the Kimchi mayo seems like a great condiment!!

    That kimchi paste looks like gochujang - which actually is chili paste. As a Korean I have never heard of kimchi paste o.O

    One question, any substitutes for gochujang(excuse my horrendous spelling). Is Chilli paste+Miso paste a good substitute?

      It may be worth a mention that Sambal, Sriracha and Sweet Chilli Garlic are not good subs for Gochujang. If you sat and tasted it, and compared it, you would see why I say that. Gochujang has a flavour closer to Paprika, and a heat similar to Problano peppers (~1000 to 3,500 Scoville heat units). And if you can picture adding paprika to corn syrup, that kind of texture and thickness and sweetness (the sweetness comes from malted barley reaction with wheat or soy flour over time).

      That isn't to say other hot sauces cannot be used. More to say the comparison is like comparing paint to wallpaper. While they are very different things, the outcome of a covered wall is achieved. Same with the hot sauces, they are very different, but in the end, a hot dip is a hot dip.
