Here's a fun idea: A challenge where the normals have to each pick one dish from that cookbook and have to make both the original version and their interpretation of a modern one. With the added caveat that they can't just pick the simplest ones.
I honestly like this style of format. There is a challenge, but doesn't feel like a timed challenge. During the mean time, it also feels like more of an educational video. I'd be happy to see more like this here and there
Agreed, the format is great and it can move to other types of food that they are not too familiar with. Next up, Swedish Kroppkakor (literally means body cakes, but I have no idea why) :).
This is one of the most enjoyable episodes you have done in a while. No panic, no rush, no gimmicks. Just two friends working together to try something absurd.
Now, I have an idea. Take these recipes and "modernize" them. Make changes to make them more up to date but still stay with the idea and flavours of the dish. Would be interesting to see what you guys can come up with! Love the videos. Love you all!
The thing about the modern way of doing this, is that you would not do anything of the sort. The sauce would fly, but it's very complicated and maybe more steps than you really need. Duck basically already clashes with the concept of being light, as it's fat and dense. Thus this song and dance to try and un-duck the duck. To make it light, use some of these ingredients, but treat them way differently. Essentially assemble them into something like Peking Duck with pancakes. You do the sauce, probably with a way condensed process, and reduced down. Then you take the spinach and/or similar fresh veggies with thin slices of duck on pancakes. Drizzle the sauce on, done. Now it's light by virtue of being like 50% fresh veggies by volume and fluffy pancake. Very airy, fresh and full of that sauce. Also you can actually tell you are eating duck.
A cooking channel could easily just live working through 2 or 3 of these books... think Tasting History, Townsends, English Heritage or D. Hollis... and they would have a ready mix of viewers once the algo figured them out. I know I would be one of them (considering the list I just put there).
Hey guys, can you do a video on the book "the forme of cury"? It is the first ever recorded english cooking book from 1390, would be hilarious to let the boys try to decypher the old english recepies in a video
It was published at the request of Richard II, who ironically died of dehydration and starvation in an oubliette after Henry IV seized the throne from him.
Actually quite lovely to just have a "regular" cooking vid for once. Just nice to see ebbers and spaff chatting casually and teaching the audience gently.
Ben's role is usually as voice of reason, since he's the chef and has the most knowledge to share, but whenever he's on the hot seat and isn't obligated to host his chaotic "for content" side really shines
Mike using his daughter Lottie as an excuse to escape work 🤣🤣🤣 !!!!!!!!...... Jokes apart...... So happy for him and Kirsty on the new Baby Huttlestone ❤️❤️❤️ !!!!!!!
one of things i love about videos like these, when each of the normals gets paired up with ben, is that u can really see how each dynamic is different 😂 when paired up with jamie, ben becomes a little bit more chaotic😭
“Today in ‘EBBERS DELIGHTS’, we have…Ben doing 101 things with a duck!” Also, Izzy is the MVP of this video going “Quack Quack”. Happy Women’s Day to SortedFood HQ!
I’m really enjoying the move back to tasting the food at the table. I get that Covid guidelines made the change necessary originally. But I didn’t realize how much I missed you all sitting around the table until it started to happen again. There is a different energy and it is easier to see everyone’s reactions at the table
Between this book and Le Repertoire De La Cuisine in this day and age I'm surprised there is no French chef who hasn't started just filming making all the recipes
I love watching ‘anti chef’ but especially when he is cooking Julia Childs recipes from her books, similar idea but, obviously, the books aren’t as old as Mrs Beeton’s etc. And, of course, I love watching ‘Sorted Food’ too. ❤
I love how Ben’s trying to talk around the duck thing 😂 could have tried the old classic though, “When a mommy duck and a daddy duck love each other very much…”
At Disneyland I saw two wild ducks going at it and my dad decided to say to my mom “Donald’s doing Daisy” maybe thinking I wouldn’t understand but I’ve been scarred for life ever since.
love these old recipe book episodes, really cool hearing Ben talk about the outdated culinary ideas and why the thinking we have today is better. great and fun video!
I love the guys working from the old recipe books! It is hugely entertaining watching them interpret the instructions through a modern lens, but also great to see foods and styles of presentation that have fallen by way... Many thanks! :)
Love all of Sorted's videos. But I would love to see more of this kind of format of just cooking and bantering with one another. It reminds me of how my family just gathering in the kitchen spending time together
It was really great watching you cook this. It reminded me of the way my father used to cook. He was a highly skilled chef in the early 1930's onwards. Thank you
I’m a culinary student at le cordon Bleu Paris and am graduating September of this year. I have been watching for a couple of years and thought it would be a cool video to do 2-3 recipes from the 3 different level( basic , intermediate, superior) but they have a similar set up as culinary school practicals and see how the basics do as the recipes get harder.
You guys should definitely try and have Dylan Hollis on for one of these episodes some day. He's the undisputed master of old cookbooks, and I'd love to see both you and him in a video together
Out of all the historical dishes you’ve made in this series this one is the MOST 19th century yet. The texture of the duck makes sense given zephyr means ‘gentle wind’ and is associated with clouds/cotton/spring. As soon as you said the name of the dish I immediately guessed it would be a mousse!
Good on Jamie for perfectly taking apart that duck! It's times like this that you see how far he and the others have come in a year in terms of skills.
Soooo…101 things you’d rather do to a duck, you say Ben. As a matter of fact, I seriously love making duck, so I’d much appreciate the Video “The 101 things Ben would rather do with a duck!” Go!
I like this kind of episodes a lot! There is no time pressure, but there is some pressure connected with the unknown. Recipes are a bit mysterious, vague, and I feel we can really learn something about culinary history and how the tastes change through centuries. Also, it seems to me that many recipes relied not on flavour combinations and good quality ingredients, but on technique, processing and very sophisticated ways of presenting the final dish. I think it's a great lesson for homecooks who try to have some variety in their dishes - not only good examples, but also what's not really worth the time and effort. Jamie and Ben made a great duo, with Jamie being the voice of reason here - and I like that Jamie insisted on sticking to the recipe even when Ben knew a better way of preparing something. I wonder what would be the result of a comparison of dishes, if you had 2 chefs cooking the same old recipe, with one sticking very strictly to the text (maybe with Jamie on the shoulder) and the second one doing roughly the recipe, changing whatever he or she thinks would work better (Barry would be an inspiration here :D)
My mom apprenticed as a cook under a classically trained Chef and the FAFFING in these classic recipes is unending. No wonder she became a languages teacher after all was said and done.

as a Brit living in nederland, I absolutely adore bitterballen and kroketten (I even made kroketten for christmas back in the UK and my family loved them). Big +1 from me!
When Ebbers said "Yes..." on the question as to whether ducks and chickens are the same, he looked at the camera like he knew that the next statement that most of the bones are the same just slightly different would upset *someone* in the comments. We all know that there's some expert in avian skeletal structure watching and s/he is *seething*.
There is an air of confidence about Jamie while he casually butchered the duck that makes me feel so proud as a long-time watcher and subscriber of Sorted! I love watching the guys gain new skills but also still be chaotic as per usual 🥰
Hey Sorted Team, the "normals" (for me they are mor like "assistant cooks")have so many badges for cooking/creating everything, wich is totally ok for me. BUT sometimes i have the feeling their use of knifes (especially wich knife for what occasion) could be a little bit better after that amount of time. So i think an episode of something like that would be very nice. Thanks for your attention
Also, you guys were supposed to use a "Fancy" mold for this dish. I usually plate it slightly differently. But it is our Thanksgiving traditional that we have every year!
Have you guys ever considered creating a book that follows along as one of the "Normals", so we can level up and get a similar experience to them. Or even for cooking episodes, leave some kind of how to in the notes so the "audience" can cook along if they want
Fancy helping us make Sorted (even) better for you and the whole community? Take part in our Big Survey Of The Year here: bit.ly/3mor7c0
Pls delete when needed but there's a part in the cc where it says "shoe paste" instead of choux (around 1:49ish)

With the added caveat that they can't just pick the simplest ones.

You left poor ebber's with sauce all over his face at the end for shame.
@@WesDuplantier203 funny I thought that he said shoe paste and that that’s what he meant as in it wasn’t very good😅
I like how ben is more chaotic when he's with just Jamie and Jamie almost becomes the voice of reason 😅
*almost*
Lol you know things are bonkers when Jamie is the voice of reason😂
Jamie has two modes: Chaotic Good or the team's dad. 😂
Meanwhile Ebbers is just *waiting* to unleash chaos when he doesn't have to be the voice of reason 🤣
I mean, no matter what he does, jamie is going to make a worse mistake.

I love when the team get involved in the running jokes. The "Quack Quack" in the background was very funny.
...and after the 101 things to do to a duck!
I thought they were going to go with "duck around"
When I was younger Inkheart had a misprint of moving quackly in it. I now read moving quickly the funny way every time.
This is one of the most enjoyable episodes you have done in a while. No panic, no rush, no gimmicks. Just two friends working together to try something absurd.
There's something pleasing about the vibe Jamie and Ben has when cooking together. Good stuff
Jamie is following instructions, helping Ben read the recipe, and being generally a pretty competent cook. In all, a perfect sous-chef!
I do like this combination a lot
Definetly would like to see more of it
was botu to say this, two of them are a joy to watch when they are alone
It really is a great combo, it will would be interesting to see the other lads work along side Ben like this and then compare
I like how Ben could have just said "mating season" for when the ducks aren't hunted but instead made it somehow 100x more awkward 😂😂
Very true. Ben has talents beyond “Chef.” Add, “ability to making things very awkward”
He can't help himself, he is just full of ben-uenndos
Jamie didn't get the ducks and the bees talk. Lol
Repro-duck-tion? Eh?
Absolute quakers.
Love it that Ben does the chef thing of reading the recipe and then ignoring half of it. 😂
That old classic 🤣
While Jamie keeps correcting him, using said recipe! 🤣🤣
@@GIBBO4182 that is indeed the best bit! 😂
I think some degree of that is expected with recipes of this era - they were definitely written for people who largely knew what they were doing.

"Fry up some veg!"
