      It's nice to get the odd glimpses of behind the scenes actually. Seeing him cracking up made me laugh too. Cos although you get good tips on cooking and learn loads, it's baasically just a funny show. Gone on for so long that you feel invested in everyone. Even when Ben is away drinking Campari on safari.

    I can't stress how proud I am of the boys for not giving up when they read the title of the dish, or when their jelly went wrong... Can't say any of it tasted fantastic though... Sooooo much Vinegar!!

When James left they talked about how he was basically forced in front of the camera and Mike really regretted doing it to him even though it worked out well in the end. Sorted have also said a few times they have staff who don't want to be on camera

    I love when they interact with the rest of the crew Kush's comments, laughing from the side and Izzy's hiccups are some of the funniest moments i've seen on the channel. Please put there reactions in more. I think you should have a 3 way battle the Chefs, the Normal's, and the Crew to see which group are the best. As for Ebber's payback i'll say page 867.

    Kush was a delight this whole episode. The "I'm a chef" justification is like the HISHE version of "because I'm Batman". And then him trying to put those things back on the boards since he doesn't want to finish them and then deciding against it! A gem! Kush is a real gem!

    I much prefer the last two videos you've added (including this one) to the others you've released lately. You seemed to go in a new direction when James left, but I think the old Sorted formats were why most of us fell in love with you. Battles, Pass It On and Think like a Chef are all hilarious episodes where the Normals forget everything they've ever been taught and bully Barry to the point I genuinely feel bad for him. More of this please!

      I agree; I've watched Sorted for years, but this is the first time in months that I've cried laughing. I love some of the new content, but a few episodes have seemed more like a 'normal' cooking show - this one is back to basics, much less 'polished' but so much fun to watch.

    As a long time fan of this watching with my teen kids to inspire them in the kitchen, I have to say seeing Kush in the video and laughing it up made the video for me. He and the other team members, if feasible, should be seen more. It takes a village and work to make these videos a success. I remember some of the earlier ones seeing Izzy (hiccuping one for example) and Ed (even hearing him when Jamie knocked the light over) was phenomenal!

    I really want you to try some things from a book called "Martha Lloyd's Housebook" it is aa collection of recipes put together by Martha Lloyd, who was Jane Austen's best friend. Martha lived with Jane, her sister Cassandra and their Mother. Martha did most of the cooking so he recipe collection is things we can be pretty confident Jane Austen would have eaten.

    You shouldn't heat the gelatine sheets over 60°C or it looses it's bounding ability. First rehydrate the gelatine sheets in lukewarm water. Second cook the ingredients and then let it cool to 60°C then add the rehydrated sheets and let them desolve. Third step, put it in the Freezer to cool down to 8 °C so it can get firm.

      I have such high expectations from aspic because of Food Wars. He set really rich chicken broth into small cubes of jelly. Put that over hot rice and let it melt.

    Vinegar aspic with pork is one of the best treats my grandma does for me when I come visit her.
    It is an aquired taste I also like it with mashed potatoes.

      First cookbook?! You need to go back another millennium for that (at least in the West), to Apicius' Roman cookbook, about 500AD. I would *love* to see them or the chefs take on some of those. Grab the garum!

    I bet back then most people enjoyed vinegar as a flavour, simply because they would have been eating a lot more things preserved in vinegar during the winter months. Probably a similar reason with the butter - if you put butter on everything then you are going to enjoy it a lot more.
    You'll always enjoy things that you eat more of because your digestive systems microbiom is heavily influenced by foods you have previously eaten and that goes on to affect your cravings.
    So if you have a high vinegar and fat diet you will find those things far more enjoyable.
    It's also the reason that the easiest way to improve yours and your kids diets, is to blend vegetables you want them to eat into things they already eat - Jamie Oliver has a great tomato sauce that does this and you can't tell it has 5 or more other vegetables in. Feed them that in everything that calls for a tomato sauce and before you know it they'll be craving those other vegetables without knowing why.

    I have a copy of Mrs. Beetons, mine is from 1912 and is still 5 inches thick. On the opposite page as the aspic recipe is a recipe for a brown sauce. A brain sauce for sheep's head to be precise. It requires 2 sheep's brains, ¾ pint liquor in which the heads were cooked, 1½oz butter, 1½oz flour, a small chopped onion, 1 tsp vinegar and salt and pepper. I'd say you got off easily-ish.

    2:29 I think they mistook the direction "a quarter pint" to mean "a quart or pint". When I saw how much vinegar they measured out, my jaw dropped. Perhaps I've read too many "English" mysteries because all I could think was "Don't you guys know what a pint of beer looks like? Take a quarter of that!"

    I have a slight suspicion that the gelatin ingredients- such as the eggshells- ought to have been further processed? Crush up the eggshells, chop the celery smaller, etc. etc.

    Give Ben one of the recipes Mrs. Beeton adapted from the Pantropheon, like baked red mullet with a sauce of anchovies, sherry, and cayenne. :)
    And then give him the original recipe, as well, lol.

    You're a brave man Kush. I don't know if I would have done that. It would kinda be fun to see Kush come back in and try to "modernize" (for want of a better term) the recipe to make it actually palatable. It doesn't seem like it's that far off something that could be yummy.
