I love this recipe and have made it. I proof the dough in a bowl that fits my instant pot on yogurt setting, roll out on silicon baking mat and cook in Lodge 12” cast iron skillet. It comes out awesome and I had it for breakfast today. Thank you!

I love home made pita. Occasionally I am in a hurry and I will pick up uncooked pizza dough from the market. Divide into 6 and roll and cook the same way. Not a bad substitute

Do you serve 5-7 dishes most nights even while working full time? Or do you do 2-3? What do you tend to serve together to make a filling, satisfying dinner spread?

To make whole wheat pits, use 1 ½ cup whole wheat flour and 1 ½ cup all-purpose flour. If you want to make gluten free pita, you can simply replace the flour with the same amount of an all-purpose gluten free flour. Bob's Red Mill all-purpose gluten free flour or Bob's Red Mill 1 to 1 baking flour will work in this recipe.

How long would I need to knead in a Kenwood with a dough hook. I have shoulder problems and difficult to knead. I live in the land of pitta bread on a Greek island and would like to give it a try please.

You can use whole wheat four, use 1 ½ cup whole wheat flour and 1 ½ cup all-purpose flour.

What do you mean when you were kneading the dough saying you’re making the gluten?? What if you use gluten-free flour?

Oh my! She actually used oven mitts to pull sponge out?! If it that hot your sponge is ruined! It’s best to use sourdough starter anyway. Much healthier as well as einkorn flour and not dirty white flour!

Great video. What is the temp when cooking the pita in the oven?
To bake pita in the oven: Heat the oven to 475 degrees F and place a heavy-duty baking pan or large cast iron skillet on the middle rack to heat. Working in batches, place the rolled-out pitas directly on the hot baking baking sheet (I was only able to fit 2 at a time). Bake for 2 minutes on one side, and then, using a pair of tongs, carefully turn pita over to bake for 1 minute on the other side. The pita will puff nicely and should be ready. Remove from the oven and cover the baked pitas with a clean towel while you work on the rest of the pitas.
