As a Mexican I can say this is my very favorite breakfast. There needs to be the Perfect balance between crunchy sogee tortilla and spicy flavorful salsa the egg should be teneder enough so the yolk can mix with everything else.
I could watch him for hours.. Saul - the hero of Mexican (of course not only Mexican) cuisine 😊 Entertainment on top level. Great and authentic food - always.

chilaquiles is like the easiest breakfast lol. well, in my house we have batches of pre-made green sauce just to pour on tortilla chips. also drink a hot cup of coffee. taste amazing with the sauce while you're eating your breakfast
you must be joking. this is the most basic level of cooking you could ever do. put some grilled pollo or arrachera with it and make it into a real meal!

I made these and they are the BEST chilaquiles I’ve ever made and tried anywhere! I like how you explained taking time to crisp the tortillas. Also the tip on diced onion with a little bouillon is chefs kiss ❤

After a life time of making chilaquiles, i learned something about the salsa. Ive not cooked mine down like Chef. I will now.... also i cheat and use the air fryer to make the chips then blend with the salsa after. Saves time and flavor/texture is atill there. Eso chef!
Watching a chef make it versus watching your parents make it is wild. It's usually a quick thing to make and it's nice and cheap. You can make it in bulk real easy and have a solid get together early. We once fed 18 people for the Mexico game early in the morning. Lotta chips.
