      I agree judging from my Mexican food experience in San Diego. But for me this is quite simple: if u like crispy and dry chips, then use less salsa; if u like softer chips, use more salsa. Personally, I think it's gonna tastes better than most American food at same price, no matter if it is soft or crispy.

      ¡Exacto! Y no... ¡Tampoco se trata de ahogarlos! Las tortillas deben estar TOTALMENTE bañadas en salsa, a partir de ahí puedes decidir si los prefieres más secos o húmedos a tu gusto. Pero eso son totopos con un mole dudoso, cilantro fresco, y huevos.

    As a Oaxaqueña, I can confirm those are not how my momma used to make them. Green or red salsa is common in my household. Gordon is a professional chef but in situations like these I can see how he misses the assignment. Oaxaca has some of the greatest food in the world, it’s understandable that he hasn’t quite mastered it. I love Gordon hopefully he gets calls Aaron to get him right on this one. Chips, salsa, cheese, onion, sour cream, and fried egg🤌

      To say the place you're from has some of the best food in the world is pretty bias. The world is a pretty big place and there's amazing food everywhere.

      It’s Gordon’s take on a traditional dish. I don’t drown my chilaquiles in salsa either. Beans, scrambled eggs, queso fresco, and sour cream is what accompany my chilaquiles. Some prefer them drenched in salsa, others prefer them crunchy. It’s that simple.

      There are different ways to make chilaquiles , that is the way how they make them in Oaxaca but I like the one with enough green salsa😋 and some over easy eggs and on top cebollita(onion) cilantro cream and queso fresco (cheese )

      There are two ways one can make it and it's usually with Chili Verde and Red Sauce that's why everybody talking shit. most people cook the chips in the sauce like one would do a Pasta dish while others would top it with the sauce, but since mole is very rich it makes sense to pour it on top all tho he could have put a little more sauce and the problem is solved so no biggie really lol Most here never even tried mole chilaquiles

    He actually said "Nachos" because it looks like nachos, Ramsay. As creative as you want to be as a chef, you wanna follow the original recipe. Chilaquiles are drowned in the sauce, to have them soften, and less cilantro please. Not because you add cilantro you would call something "Mexican". You don't want the cilantro flavor to be stronger than the Chilaquiles sauce. Cilantro HAS a strong flavor, BTW.

    Actually that is the entire point of the dish lol. Chilaquiles need to have the tortillas soaked until they're boderline soggy. Ive also never been to Oaxaca but in Mexico City and Guadalajara I only saw this with red or green salsa so I'm not sure people actually use mole on it

    Los chilaquiles realmente deben ir bien mojados de la salsa a escoger, actualmente son totopos con poca salsa, pero la idea es que estén super remojados, con cebolla rebanada, queso y alguna carnita o huevo

    I know, as a Mexican, i prefer Chilaquiles completely drowned, but I feel completely proud that our food goes all over the world and a lot of incredible people give thei best to prepare it.
    Let's not criticize if Ramsey learned to prepare them that way, because even in Mexico, food can be prepared in a lot of ways, and that is one of the most amazing things about our country.

    The whole idea of chilaquiles is that we cut the tortillas and FRY them as well as DROWN them in the salsa, maybe and just maybe that's the reason why Aaron thought they were nachos.

      Ay mana, a mi mas bien me dió "muina como decía tintan" este sr lo único que pretende es hacer dinero con la cocina mexicana, y no es que le hayan dado la receta, sino el como chef antes de hscer una comida de otro país debe investigar y leer acerca del la comida que va a preparar.
      Yo vivo fuera de México y para preparar alguna tradición me informo, hasta con la gente en el mercado pregunto, este su objetivo como chef lo ha perdido, ahora solo quiere fama y dinero.

    Actually Gordon Ramsey- Chilaquiles are Only Tortilla Chips, chili sauce and Oaxaca Cheese topped with fresh cheese & Cotija. What you made is called Chilaquiles con Huevo! Looks good, I like the fact you made sure the chips are crispy.

    i love how ramsey always emerges himself in learning different cultural dishes, but chilaquiles need to be soaked in the salsa not dry. they probably tasted great but they needed more salsa.

    I mean, you get to put your own spin to anything you do in the kitchen. It doesn't really bother me that he used mole instead of salsa verde or salsa roja. Using mole actually sounds like an interesting idea. What I don't like is that they seem a bit dry. Other than that, they do look alright.

      Gordon es un fantoche hocicon. Es el segundo platillo mexicano que le veo arruinar. Y eso que ha hecho solo platillos de los más sencillos, de esos que uno hace cuando anda a las prisas y con pocos ingredientes, como los chilaquiles y los huevos rancheros.       Es la segunda receta mexicana que veo que prepara, y bueno, ni como ayudarlo. Los chilaquiles son verdes o rojos, nunca de mole, los chilaquiles no llevan cilantro, llevan cebolla, crema y queso. Los chilaquiles van remojados en salsa, los chilaquiles llevan de guarnición frijoles refritos, y pueden llevar huevos, pollo o carne de res. Pero, si las versiones de la comida mexicana de éste señor, dan pena ajena

    I don’t think Chef Ramsay ever mentions he would make the recipe the same way you do. He’s a Chef, this recipe is his interpretation of the cuisine, this is what he does. That looks delicious and the ingredients are very appropriate according to my Mexican palette. The heat/eggs/fat/mole will soften those chips to the perfect bite. Cmon Raza, stop being so bitter.

      How about an American allegory?
      There are DOZENS of regional variations on barbecue. Texas, Georgia, Tennessee...even Tennessee has its own variants within that variant! Memphis barbecue! Is it not entirely plausible and reasonable that there's also not just one (1) way of making chilaquiles? Not to mention that Gordon is pretty explicit about all these ingredients being leftovers.

But if you do not soak the chips in the sauce you're not making chilaquiles. Chilaquiles means soaked in chile. So if you don't soak them, it is like saying you're making grilled cheese without the cheese or a beef Wellington without the beef.

    Nah. Those are just mexican ingredients put together in a weird way.
    Chilaquiles enmolados need to be *soaked* in mole, I mean the tortillas. Throwing in some shedded chicken, puntas de filete or eggs is okay, but you're lacking a very precious ingredient: ONION! Sautéed onion with the mole, raw onion over the eggs and you got yourself a very mexican restaurant style chilaquiles. Me personally, I would've just made over easy eggs and pour the mole over them, but that's just me

    Dear cheff those chilaquiles look great but for the average mexican, they look like nachos. Chilaquiles are usually soaked in the sauce of your choice. Usually red tomato sauce or green made with tomatillo verde. Im sure you know that. when they are very soft they're called chilaquiles blandos.
