    In Port of Spain's markets, ingredients from Europe, Africa, and the Indian subcontinent come together on vendor tables. Culantro here is known as shadow benny or chadon benni -- a corruption of the French chardon benit or "blessed thistle." It is a part of the green seasoning that is a Trinidad and Tobago culinary basic. Chef Debra Sardinha-Metivier of DSM Creative Cuisine, gives us our first look at the diversity of the Trinidadian market basket.

    I'm such a patriot. So proud! Arguably one of the most diverse culinary cultures in the world. RIP Anthony Bordain. I'm especially proud of the presenters' diction, detail and accuracy.

    Thank you for this video to highlight Trinidadian cuisine down to the very herbs and everyday cooking they use. I'm excited to visit Trinidad and Tobago and to enjoy the traditional dishes there. Great video!

    and yuh see dat bottle seasoning yuh holding there sir, is DE best seasoning I believe mankind could ever come across! it's a crying shame our cuisine is not more widely recognize. But yuh know what! it may be for a good, because such flavorful green seasonings is so unique to Trinidad and Tobago that it keeps our food pure and unblemished. I love my Trini food.

    How many Caribbean people in the diaspora really know how to prepare the items on display...the way our ancestors did? I hope the Chefs will show the next generation (on RUclips) how to prepare tasty and staple Trini foods using these items.

    I enjoyed the tour of the market. It brought back memories. The chefs through their explanations of the items at the market. You could just feel the passion for food.

    Great show on Trinidad market produce. Im happy to know Trinidad produce are well accepted in Europe and other nations to add flavour to their recipe. Very informative show on Tdad mkt produce. Keep up the good work.

    Loved this. Thank you. I was recently in Trinidad and wanted to go so badly to the market. Thanks for the green sauce recipe. I ate the best curried duck and dhal in Trinidad. Omg. I could never match it.

    Both the women chief from the beginning and the man chief at the end spoke very interlectual and educated. They both gave exceptional explanations on the different market ingredients and indigenous cuisine..
