Great review!! If you get a chance try the same companies DF54 which is a smaller more affordable version of this grinder which has a lot of buzz around it for being almost as good while being half the price of the DF64 gen 2. I would love to see your take on it.
The DF64 Gen 2 (and DF64v, and DF83, and DF54...) is well-known among home baristas because it's the only cheap, semi-decent espresso-capable grinder with 64mm flat burrs available on the market. The stock Italmill burrs aren't up to par, so most owners opt to switch them out for SSP HU/MP or Mazzer burrs. While the motor is powerful enough, its long-term reliability is uncertain since these grinders are still relatively new. The main problem with these DF grinders (across their entire line) is inconsistent quality control at the factory, leading to some poorly aligned units. Alignment issues can be mitigated with shimming, but not everyone has the time or inclination to do so. If you're using flat burr grinders, you might find it helpful to spray the beans with water (known as RDT, or the Ross Droplet Technique). This reduces static and often eliminates grounds and chaff flying everywhere, as well as minimizing retention. Cheers!
I have some experience with both. 3,5 kg with 078S and gen one df64. The itallmills burrs are definitely less suited for “lighter” coffees. Also the body is a bit lacking when compared to the 078S If i give the 078s an 7,8 i’d give the itallmills a 6,3 That being said i use the df daily and have sold the 078S because it is definitely good enough for good espresso. With the ability to upgrade to ssp in the future!

From my experience the varia vs3 with the hypernova ultra burrs is the best bang for the buck for espresso. It's like the conical burr version of this
