I tried to replicate your S3 farm on my server last month and ran into the SAME PROBLEMS. I even loaded the S3 world and saw it still worked in 1.19. This video made me feel much less crazy and incompetent. Thank you!
The game runs it's usual natural spawning algorithm in the chunk before it checks for structure spawn. If that natural check fails because no spawnable block is selected, then the structure spawn also fails.
In your first hut you only left one spot in the chunk with a spawnable block. It has to be selected if you are to get a witch. This killed your rates.
In your second hut you didn't put down the half slabs in the hut and there was ground around the hut. Many more selectable blocks in the chunk so many more chances to allow the structure spawn.
Took me a while to figure out why witches weren't spawning in my farm, finally that got that sorted, but now they aren't dying in the trident killer :( , these farms used to be easy to set up and test, tearing my hair out returning to this farm in 1.19
To fix the witches spawning... you should drain the swamp within the chunk
Cant remember exactly the mechanics of why that works
Its related to the way they spawn where the game checks the spawn spots in the chunk or something
foxy, the reason why the witch hut in the water was not spawning any witches is because of the water. the structure spawning algorithm relies on the general mob spawning algorithm. you need to remove the water in the chunk that the witch hut is in so you can allow regular mob spawning, but then prevent mob spawning by putting torches. this info comes from Hey 0ld Guy
An strcture that spawns on water needs water removed to work. Bravo Mojang, peak gameplay design...
If you ever want Fire Resistance potions it is possible to replace the ice in the base of the trident killer with magma blocks. The witches will pull out fire potions and sometimes drop them if they die at the right time. Not that FR potions are that difficult to create, but it can help early on. 😉
What a lovely compact design. I didn't know they'd spawn on the tripwire, that's very handy to know.

Slack put out a video a while ago that mentioned which huts produce much slower when they are over water. I thonk that's what you experienced with the first one.

Is there oonnly one span location per hut or mutiple, or can a layered build work, or what can be done to get more than just - spawn spot per 1 hut to get higher rates? The single spot single hut farm is painfully slow.
Theres a bug with witches not spawning correctly its been in the game for a few months now since the 1.19 release...
why not bubble column the witch up to you after being pushed???

only thing i seen in jessie b store was the purchase of tinted glass... store was a little messy though seems the was something all over the floor behind the counter.. someone needs to clean that store once in a while.. :)

Is it the level difficulty because u are new to the area? Is that no wiches? Doesn't the area difficulty go up if ur there over 5mins or is that only Java

I noticed your creative worlds in this video seem to be in game mode 3(or 4, i’m not sure, but it’s a normally unreachable game mode state). I was just wondering if there was a particular reason you have them set like that?
It's just normal creative. My texture pack messes it up

Chunk borders work fine. Make sure your armorstand isn't standing on an angle
