Are maps included with the Cobb? If so do you have to pay for each map? Can you make your own custom tune? I am considering cobb but I would like some straight answers on these questions before I do.

I work with data analytics and just purchased the AP to do a bunch of...well analyzing and driving. I want to log the stock setup on my 2015 wrx as well as my stage 1+ big SF intake - it looks like the first time you install, you HAVE to pick a tune. Can I just simply revert back to my _raw backup to log those numbers before bolting the intake on? (asking without visibility as it comes tomorrow woohoo!).
We offer a "Stage 0" or "Stock Mode" map which uses stock calibration data with the Accessport installed. You should be able to choose that during the installation process so you can log the car with the factory calibration data. - Marshall@COBB

Second, my friend gave me his old v2 access-port when his ecu fried. He said I could take it to you guys to get it unmarried. I have the access port and a quote from the dealer were it shows his car had electrical issues and a fried ecu. How much would it be to get it unmarried?
The maps will already be on the Accessport. I'd recommend a firmware update via AP Manager to make sure you're on the latest version. More details on that here: www.cobbtuning.com/support/step-by-step-firmware-update-instructions/ The v2 is pretty old at this point. It should still work but, depending on what vehicle you have, there may be maps/features that are v3 only. Sorry for the late reply. Ideally its best to have a charger on the battery when doing an install or uninstall. If you are simply flashing from one map to another and you are confident the battery has a good charge. Typically its fine but it never hurts to be safe.
To datalog they tell me to do a WOT in 3rd gear. Ok but where am i supposed to do this without risk of jail time? Redline in 3rd gear puts me around 105 mph.
Hey Dan, The Accessport comes with several off the shelf maps that work with specific modifications. Most vehicles have maps for an intake and or downpipe. It does not. You must choose a map file that is compatible with any mechanical modifications.
