    It's nice to know that a food guru such as yourself drops egg shell into the mixture too sometimes! I don't feel so bad now! ;) The best way to get it out is to use the other half of the egg shell :D Awesome recipe .. looks delicious :)

    Love this recipe and will definitely try this! If you want to make it a bit more oriental you can also add a splash of rosewater, goes very well with pistachios and oranges.

    These are fabulous. Didn't buy enough pistachios so used dates instead (half and half) including the chocolate chips. Simply wonderful. A small request if it's not too much trouble...... Weights in grammes would really help us from the UK and Europe. We don't really do this cups malarkey. Thanks Bob.

  • @MorganUmbra

    if you have a rolling pin or a meat mallet, you can put the nuts in a ziplock bag and smash away until they're how you want them. my culinary class had only one processor so that's what we usually ended up doing. worked with pecans, should work with pistachios.

    Would it be good to toast the pistachios and cool them before grinding?

  • @Ihasmoarface
    @Ihasmoarface 12 лет назад

    pistachio i think makes the dish complete, and works well with the citrus flavour. If its too expensive to find these nuts in your area, then maybe try pecans or walnuts or a blend of both? Its hard to match that awesome pistachio taste. Oh, and just add a drop or 2 of a green food dye to the wet ingredients, it will give the green tinge you want

    Hi Chef John! I tried making these Greenies for my labmates this weekend. As soon as I added orange juice, the butter kinda separated from the rest of the wet ingredients... it looked curdled! Definitely wasn't a smooth batter as yours. I went ahead and took the risk of baking it anyway... it was still good :) All ingredients I used were fresh, except for the vanilla extract, which was like a month old bottle. Wonder why the batter looked curdled?! Thanks!

    Instead of regular chocolate chips just add golden raisins and macadamia nuts, and maybe some white chocolate chips.
    Shredded coconut would also work really well as a welcome addition.

    Sugar is considered a wet ingredient because it is soluble in liquids. When mixed with milk/butter/water, it completely dissolves and they form a homogenous mixture. That's why it's usually combined with the wet ingredients! =)

  • @rauc6788

    no, its just full of orange flavor because most of the aromatic oils are found there. The layer below the zest (the pith) is really bitter, and the fruit itself is acidic/sour.
