if you have a rolling pin or a meat mallet, you can put the nuts in a ziplock bag and smash away until they're how you want them. my culinary class had only one processor so that's what we usually ended up doing. worked with pecans, should work with pistachios.
pistachio i think makes the dish complete, and works well with the citrus flavour. If its too expensive to find these nuts in your area, then maybe try pecans or walnuts or a blend of both? Its hard to match that awesome pistachio taste. Oh, and just add a drop or 2 of a green food dye to the wet ingredients, it will give the green tinge you want

Hi Chef John! I tried making these Greenies for my labmates this weekend. As soon as I added orange juice, the butter kinda separated from the rest of the wet ingredients... it looked curdled! Definitely wasn't a smooth batter as yours. I went ahead and took the risk of baking it anyway... it was still good :) All ingredients I used were fresh, except for the vanilla extract, which was like a month old bottle. Wonder why the batter looked curdled?! Thanks!
