    I just wanted to say thank you. I love how you do recipes that do not include exotic or pricey ingredients that only chefs have access to. I love that you do not use specialty pans, utensils, or tools to do those recipes. I really love that you include your own mistakes because, to me, cooking is never perfect. I especially love the fact that you never caved into the dumb algorithm that RUclips uses thinking that someone making a dumb face for the video icon somehow makes the video better. I really want to thank a friend of mine that suggested a few videos of yours a while ago. Again, thank you Chef John and please do not change.

      *or possibly modified to be deep fried with funnel cake batter and THEN served with ice cream...because deep frying anything removes all the calories and negates any chance of contracting/contributing to diebettus*

    My grandmother made a pie she called "Pecan Surprise". The bottom half of the pie was cheesecake. The day she made it was two sepeate layers, but after a day or two in the fridge the pecan pie filling would be completely absorbed by the cheesecake and it would turn into the mose divine pie.

      That's a good one that goes back at least 50 years--I think it might have been a Pillsbury Bake-Off winner in the 1960s. Pillsbury has a recipe online where they called it Mystery Pecan Pie.

    I do believe you've made the most dangerously addictive substance on the planet, at least for me. I love pecan pie, it's a nearly perfect dessert. The only pie I like more is chocolate chip pecan pie. And here you've made something that I'm sure is immensely better, so good in fact that I'm almost hesitant to make it. The fear is that I may attempt an act of shameful gluttony and try to eat the whole thing. But I also believe that facing one's fear can lead to personal growth, so....

    Making this as soon as I get more pecans! …I trust your recipes to the nth degree. None have ever disappointed, and I’ve tried a lot. My daughter asked me if I could even cook without a recipe. I said probably, but why would I? I might be a recipe addict, definitely addicted to Chef John’s!

    Did this recipe and put liquid honey instead of corn syrup because thats all i had on hand. Just took it out of the oven and it took 40 minutes at 350 to get the same looking pecan crust as yours. Its cooling down, cant wait to taste test it.

    These are DANGEROUS! Holy cow! They are sticky, chewy, fudgey, nutty, and dense. I cut mine into 16 pieces too, I think that size is very generous considering how rich these are.
    I will advise not to skip the parchment paper step. I baked mine in a foil disposable 8x8 pan and did not make the parchment sling as my plan was just to cut away the pan. I was able to do that, but it would've been much easier if I used parchment paper instead. The pecan pie filling brimmed over the foil pan too. It all came out fine, though. Cutting away the edges made samples for the cook 😊.

    You can use walnuts instead of pecans, and finish by drizzling the brownies with a small amount of melted chocolate to make Dixie pie brownies instead of pecan pie brownies for an added cultural effect (at least, for the Americans watching these videos).

    I hate making pie crusts, so usually make graham cracker crusts. For years I have been making my pecan pies with a chocolate wafer cookie crust, same idea as yours but not does not zonk you out. Love watching you no matter what you are making!

    I like this idea. Now you've made me think back to when I made a chocolate pecan pie which was super rich to going farther with hey wonder if I can make a pecan pie that tastes like the frosting on a German chocolate cake and make coconut butter pecan pie 🤔 sounds good if you like that frosting which I do .. thanks chef !

    Wonder how it would work in a larger sheet pan. Brownies would partially cook a little quicker but the pecan pie part would cook in far less than an hour.

    0:38 A better explanation: a reddish color in your cocoa means it’s “dutch processed.” This means the natural cocoa has been alkalized, or that the acidity of the cocoa has been reduced. Be careful when substituting cocoa’s in recipes because of this - you need baking powder (not baking soda) for Dutch processed cocoa to rise properly. If your recipe uses both powder and soda, make sure to use the cocoa indicated in the recipe for the correct ph balance/reaction.
    Chef John calls Dutch processed “higher quality” because it tends to result in a more intense chocolatey flavor than natural cocoa. But it doesn’t necessarily indicate quality. Hersheys regular cocoa powder is natural cocoa, and their “special dark” is Dutch processed. Same cocoa, different processing.
    I keep natural cocoa on hand for most baking and intensify the flavor with coffee or espresso powder. I save the Dutch processed for homemade hot chocolate mix, or anything that isn’t meant for the oven. I like the more classic flavor of natural cocoa, and my recipes call for it. If all you have on hand is “regular” natural cocoa, don’t go thinking you need to buy hersheys special dark or splurge on guittard, especially if what you’re making is getting baked in the oven

    I recently made a slab pecan pie that would not set up. I thought it was ruined, but I found a tip that said to seal it with tinfoil and bake for longer. I didn't have tinfoil, so I covered it with another sheet pan. I wish I had found out sooner because the edges were overcooked, but this tip saved the recipe. I think doing something similar here would probably have shortened the second bake time and made the final product a little less brick like.

    Corn syrup is not readily available in the UK. Try golden syrup, using a little less.
