The best recipe I've tried for coconut macaroons. They turned out absolutely perfect. I used standard flour instead of cake mix and it was still delicious. Thank you for sharing your lovely recipe and explaining it so well.
I just made these 10 minutes ago and they are absolutely delicious and chewy and moist! I followed all the steps but instead of chilling it for 2 hours in the fridge, I chilled it in the freezer for 30 mins instead.
Nina Acton did you use the cake flour or regular? Do you think it would change the affect of the texture?

Of COURSE it changes the texture, otherwise there would not be the different types of flour! However, you will still have an edible, if less superior, product if you use all-purpose flour instead of the cake flour.

i never mixed cake flour in macaroons before it's nice to make them a different way , look nice and fluffy and not so dense i can't wait to try this recipe thanks !!!!!!

You could use an equal amount of all purpose flour, although the cookies won't be quite as soft and tender. Cake flour is a low gluten flour that gives things a soft and tender crumb.
Can add almond flour and all purpose flour mix, for cake flour?
I found a reference that said to use a cup of AP flour, take out 2 Tbsp, then add 2 Tbsp of corn starch, sifting it all together.
As mentioned in another comment, I tried this recipe today. I used the "cake flour" substitute. The macaroons are tasty!

I'm curious to know if you have ever made the Coconut Macaroons with the sweetened condensed milk that I see most recipes use? I have never made them at all and I was wondering what's the difference between the recipes? Thanks so much

If you store them in the fridge they will last about 3 to 4 days although they do soften.

No, you can use regular flour.
I used self raising flour as that's what I use for cakes hope it will turn out just fine.

I made these macaroons and found that you have to be VERY careful not to over bake them. There is more flour in this recipe than most other coconut macaroon recipes. My first batch turned into little
golf balls. I prefer the much simpler recipes that also don't have to be chilled before forming the cookie. I'm all for less work and time! I took them to a reception and they were gone in a flash!

Thank you for a yummy recipe! I do not find sweetened dried coconut flakes here in Switzerland, only unsweetened ones. Can I use them instead and may be add a bit of sugar to the dough?
The cookies are quite sweet, so even if you use unsweetened dried coconut, I don't think I would add any more sugar.
The recipes are all basically the same. I made some today and used brown sugar,Turned out great! I've seen other recipes that use orange juice. Lots of ways to tweak this recipe. I'm gonna try some pineapple juice next time. Chocolate drizzle works well too.

What Do you use to replace the flour? Almond flour or coconut flour?
I really want to try these! Is it possible to use desiccated coconut as well as the sweetened, shredded? Also, will they carmelize more at a slightly higher temperature, or should one bake for a longer duration at the recommended temperature?
Cake flour is a much more delicate flour, and contains less gluten than all-purpose flour. For delicate, European-style cookies, cake flour is often the standard. However, it was my surprise to even see flour in this recipe, as its usually served during Passover. (Kosher for Passover would preclude the use of wheat flour in cooking/baking)
if i used unsweetened coconut, do you suggest adding sugar?

If u want to make it sweetened coconut just add some powdered sugar

Hi! It says on the box of the meringue powder that it can be used in recipes that calls for egg whites. So I am just thinking if it is possible to replace the egg whites in this recipe with meringue powder? Just so, I could use it other than royal icing. Would love to hear your recommendations on this. I made these macaroons but it didn't form the shiny crust like the picture. I did warm up the egg white and sugar. But my coconut was cold, I took it out of the fridge. Might that be the reason?
