I am such a domestic disaster myself but your videos inspire me. Also they are simple yet delicious! I’m gonna surprise my family with these cookies :)
Sooo Amazing!! I used coconut flakes instead of coconut powder, and I melted some dark chocolate with salt and pomegranate syrup. After the rochers coco were cool I dipped the bottom in the chocolate mixture and let cool down.👌😍 Soo good!!

My husband loves these. I make them at Christmas. He likes them plain but I like chocolate drizzled on top. I just use a small cookie scoop. They keep well in a tin. 🙂 I’m enjoying your cooking videos.👍💖

I literally just pulled mine out the oven. My proportions were 2 jumbo egg whites (almost exactly 1/3 cup). Half cup sugar, 1 cup coconut. But too loosely packed, because I added more. In fact, I used up all my coconut, and mine were still looser than his. So pack your coconut tight! I got a dozen on a cookie sheet, but could have done 18 or even 24 smaller ones. Had them in convention oven at 400 degrees, with fan on for 7 mins, tops were browning too fast, (just like he said). so I turned off convection and did 5 mins, the 2 more. They are cooling right now, but look great
Gerard Jones Ah, you might be right. I did use sweetened. Not questioning you, but why would there be a difference in how much liquid they absorb? BTW, I took them for thanksgiving dinner at my brothers, and they all got eaten before dinner started, even though I intended them to be an addition to dessert. So, maybe they weren't perfect, but they got gobbled!
Hope yours turn out crispy n soft in the centre. I dont understand sweetened coconut?? I just use fresh grated coconut. Think we need to stir for longer time in order for coconut to stick.

I think a touch of salt would work here too, as it brings out the flavours more along with denaturing the egg whites making it easier to whip the egg whites.
In the video, you say "grated" coconut, while the written ingredients says "desiccated" coconut. I used desiccated coconut and it sucked up all the sugar syrup--I had to make another batch of egg white/sugar syrup to make them hold together. It seems grated coconut with its natural moisture would work much better. Can you clarify?
I made these coconut cones with Monkfruit, a natural sweetener, low glycemic & low carb. 1/2 cup for the recipe. Monkfruit sweetener has zero calories or carbs & will not raise blood sugar levels. Therefore, it may be a good option for people with diabetes.
But, actually, you used 5 ingredients: egg whites, sugar, coconut, salt and vanilla extract....just sayin, ok....I love your accent! And, coconut macaroons or "boulders" as you call them, or "rocks", are my favorite dessert followed closely by cheese cake! Thank you for sharing! 💖

I'm french, kinda new here, and i dont know where to find some cheeses or charcuterie you get. I plan to do a raclette for exemple, and my gf felt in love with pâté too, but dont know where to get them without spending hundreds of dollars. Do you have any advice ? Nice recipe. Almond flour is just unattainable and very expensive to import here, so this recipe helps because the abundance of coconut where I live here.
I add toasted finely ground almonds to the batter and after baking, finish with chocolate. Yum! Our family loves these.

You might be using the wrong coconut.
You need unsweetened.

You didn't ask me but I would say absolutely no. The sugar is important for the texture not just the sweetness.

I think you're confusing "macrons" with "macaroons"
macrons are made with almond flour but if you can get almonds, you have almond flour
