    Have you noticed that you are wasting a lot of those potatoes. If you find the right, sharp knife, you won’t waste nearly as much. My mom trained us like we were in the army/Air Force. That meant almost paper thin, so much so that you can almost see thru the peels. Practice makes perfect and waste not want not. I truly enjoy watching your videos. Thank you so much, for your knowledge and great taste.

      Waste not want not. Peels deep fried are awesome. Pigs my eye. Yum , I also peel mine thin as possible,

      I use a peeler but probably not the same way others do. I hold it like a knife and peel towards me. LOL If doing carrots I go away from me.

    Another great video, Leisa! I was literally giggling as I watched you peel the potatoes. My MIL started catering after being begged to years ago. My husband, kids and I all were on her team. The first time she saw me peeling potatoes, I got a swat and told that I was throwing 10 lbs into the garbage the way I was peeling and she showed me how she wanted them peeled(we peeled 100 lbs most of the time for a meal). Oh my, girl, if she'd seen you using the pearing knife and cutting away that much potato, I can't imagine what she would have done....she' grew up as a poor Ukrainian immigrant that were living on what they could grow so she knows every way to use every usuable part of every food...literally. She's 85 as of this weekend, and still giving me advice and asking me what I'm canning next...Lordy what a wonderful MIL I won when I married my cowboy hubby.

      BTW, even my MIL know's your channel name...I had to write it down for her. She asked me where I'm learning all that got me back canning and wanted to tell the other ladies to tell their families.

      I like this way for canning....quick and purdy taters for the jars. I would definitely use those chunky peels in some way. I'll be doing this soon, as the cautious peeling time/effort is a big reason I don't have enough spuds put away.

      @@SuttonsDaze YES! That's why I was peeling the way I was. I slice off fingernail and regularly bloody my fingers....she can't watch me anymore sooooo...and I have a pig and chickens...LOL Guess how I'm peeling? I even toss those into leftover juice from a roast or something if I'm desperate to feed a dog or cat one day.

    If you toss canned potatoes with olive oil, salt and pepper, and then roast them in your air fryer, they get incredibly crispy on the outside and fluffy on the inside. Very lovely.

    I canned 100# of potatoes 2 years ago and I've done 70# so far this year and have 20# to go (keeping 10# for fresh.) I learned that if you blanch the potatoes for 3 minutes then cool them down in ice water they don't cloud up. My jars this year are BEAUTIFUL compared to the cloudy mess from before. (russets.)

      if you blanche and ice down do you still have to soak and rinse like 3 times before that??

      @@laurabrown5983 I don't but I guess it's however you want to do it at that time. They don't turn black or anything because they cook and while you can get a little cloudy at times, it doesn't diminish the taste. You can simply drain, rinse and then use (or put in pan and add a bit of water to heat them up.)

      I just peeled 20#s so far this morning. While they are in canner, I will peel another 20#s and so on. I have 100# to do. They are on sale for $1.97/10#. I had to make sure how much time in canner.

    I canned 150 lbs of potatoes! 100 pounds of carrots! Chicken breast, chicken thighs, chicken legs and ground beef! I'm running out of room! I just love your videos Leisa!

    I grew up without water in the house. We had to haul water about a half mile, so every drop was precious. I learned at an early age how to reuse water. But thank you for mentioning that. Not many people have experienced being without.

    I just did a 10lb bag of yellow potatoes and the way I peel them is I stick them on my Johnny Apple Peeler and give it a whirl, that goes pretty fast

    I toss my potato peels with olive oil, S&P, and then pop into oven or air fryer - SO good! Makes yummy fries :)

I credit you for my adventure back into the canning world. Through you I discovered Forjars and now today I have a beautiful quilted canning mat on the way that suits my hippie soul to a T.     I live in the high desert, formerly Pacific Northwest. Even there, mom used kitchen water on a big turnip bed. Big yummy turnips. Here I am creative about using kitchen water in my houseplants and garden. I recycle all clothes washing water.

    I agree. Forjars lids are amazing. And now that they fixed the 15lb pressure problem with the canner they released last year, I love the canner too!!!

    Leisa, love you and your videos! Omg, just watched a potato "dry canning" video yesterday out of curiosity....😳😱. Then she pulled the "sealed" lids off with her fingers, and showed how she feeds them to her family 🥺. I couldn't watch it all. THANK YOU FOR BEING A SHINING LIGHT OF TRUTH!

    Thanks for the share. Working on home canning veggies for a CKD( chronic kidney Disease) diet. "cloudy" potatoes equal potassium which has to be limited in a CKD diet. So blanching and rinsing helps with that. Also when I was first graduating for just canning tomatoes, you taught me that salt is for spice not for preservation. And with that you helped me to move in to more and more home preservation. Thank you for all you do.

    Save the potatoes water in the fridge and use for your sourdough starter. It loves all the starch.

    My husband's favorite pantry meal is a hash recipe I created. 1 quart diced potatoes, 1 pint pork butt, 1 pint diced carrots, 1 pint corn and 1/2 cup BBQ sauce or to taste (I use Sweet Baby Ray's original). Salt and pepper optional.

    I haven't seen anyone mention one of my favorite things about the ForJars lids. The 100 count boxes are NOT just 100 lids all in one big stack, they're packed in the box in groups of 25 (I think, I haven't counted). It makes it SO much more convenient not to have to worry about not having a huge bunch of 100 lids all open at once.

      I can’t get them in the U.K. without paying £21 for postage. Anyone know of a way to get them here without silly postage prices? I’d be grateful as lid here are crazy!

      @@susiea1419 Unfortunately you just have to pay the postage, unless you know someone that's coming over from America and can bring them in for you.
      You could try to minimize the impact of the postage by doing a bulk order, but then you would risk having them get stuck in customs with them thinking you're importing them to sell.

      I purchased both wide and regular mouth 100 count from 4 jars. The wide mouth were packed in groups of 25. The regular mouth are all 100 stacked together inside the box.

      I'm sorry but I found some less expensive ones that fit real good with my budget since we're on a fixed income, that is my husband is a retired Marine .and I like them better but maybe someday I'll get to try those. I have not yet taken the time to look into them,well I did look into them , I just didn't like what I was going to be buying and I bought just about double the amount for almost the same price, so I apologize but I'll try them someday God bless you.

    I would eat them, scrub the potatoes, real good and then take those skins and toss them in a little bit of olive oil, little bit of garlic and put them in the air fryer. It’s a yummy potato chip.

    Ive always been conscious of water usage no brainer to use on garden plants shrubs etc. back in the day we watered entire yard with laundry water out though a hose not into septic or city collection. No one got sick the plants we very happy. To this day I save cooking/canning water to water outside plants on my patio if I have more than needed safe it or dump it on the trees around me

      My husband fills a Lowe's orange bucket from the rain barrel outside and then fills the tank in the toilet with it. No sense in flushing an entire gallon of filtered water just for a little pee.

    I have a ton of canned potatoes and never realized how many potatoes I eat. Eye opener for me. I love them in any way, shape or form. I’ll continue to can them bc it’s so easy to mix in my meals.

    Thank you for talking about water. People take it for granted. I'm in TX and keep seeing headlines saying TX is running out of water and yet people are washing their cars, watering their lawns,... completely oblivious that there won't be any water in the not so distant future. 😒

    I used this video last year to can potatoes for the first time. I've been canning for 40 years- I can't believe I waited so long to try it. I came back because I didn't remember using ascorbic acid - that's because I didn't. I wrote a note in my USDA canning book so I'll have the information with the canning directions. There's no comparison to canned in a jar vs store bought metal cans. There's such a variety of uses. Thanks again Leisa.

    I always , put my peels in a big bowl of water , the following morning i drain off the water and fry my potato peels in bacon grease for breakfast the next morning. Waste not , want not. I never waste anything. Grandma use to fry hers like this all the time durning canning season. The rest of the year she would take a couple of jars up out of the celler and put one in the refrigerator and cook the other for Grandad for breakfast . The other got saved back for dinner that night. Now when all of us kids ( all 9 of us ) , she would have us peel up fresh potato's and she would cook them by steaming them then fry them I up. I do this my self even today. My children grew up eating them cooked the same way my grandma cooked them. 😊 miss my gram . Love potatoes fried with gravy over them.

    I like how you take the time to look at your jars and how they look coming out of the canner and explain to us. I thought I was going to have two fails on some beef roast because they didn't bubble coming out. Low and behold, they both sealed and are still sealed 2 months later.
    I love canned potatoes in my soups and stews. Gold potatoes are my preference too.

    Thank you for showing us how you blanch the potatoes. I've never canned potatoes because I thought they would be overcooked. The thought of throwing a lot of potatoes into a pot of boiling water and waiting for it to come back to a boil and then waiting 2 minutes. And then pressure canning it. Talk about overcooked. But I think I will try your method and hopefully the potatoes will not turn to mush from being overcooked.

      Hi again. I tried ugly chicken and I couldn’t get my canner up to pressure. I had had the solid steam stream but when I put the weight on the canner it never rocked. I started over again from getting up to a full steam stream but still no luck. What could have gone wrong? I get that there is a learning curve but I had 13 pints of chicken. 😢

    People... Think about it... That cloudy liquid is thick potatoe juice... Yum... Add butter salt pepper... Heat through and eat. Also really good to add dumplings to... My 88 year old mother in-law had a craving for that .. from her childhood... I made it... Oh y'all... Top with bacon... Devine. So yes white russets for the win. Ha

    We grew 80 pounds of Red Pontiac potatoes this year. I peel half and leave skins on the rest before canning. They are both delicious that way.

    Another idea for the water in the jars , use it to make a gravy for the potato's. I do it all the time, no waste.

    I can gold and red potatoes but I never peel them, I do however scrub them well and often alot of the peel comes off with that process.. like you I only add water to the jars.. I use them for everything, fried, roasted scalloped soups stews & yes even potato salad it is such a time saver... thanks for always giving such great information!

    Leisa you are so right about the water. I live on the Cal-Ore border & my well went dry last year. Praying that won't happen again. I save the plain water & use it to give to my chickens or the outside feral kitties.

    Use the water to water your plants once it’s cooled. Easy peasy! Good nutrition to plants.

    I use the water from my freeze dryer after each cycle to water my plants. Same with the dehumidifier.

    Oh my Grandpa would be having a fit watching you "peel" potatoes. He would tell you to cook the "peels" and throw away what little tator you have left. According to him you "peel" by removing a skin thickness of "peel" and not just hack off a thick "peel". 😅
    He was a great man who was a stickler for doing things correctly. But he did have a great sense of humor Aldo. Everyone loved Grandpa and called him Grandpa too. Including his cancer doctor who cried when he died.

    You could also dry the potato peels for potassium in your garden or you could fry them up

    Now that you have your pigs, there is a good Polish sausage called Kabanosy Sausage made from young pigs (less than 260 pounds) that are fed mainly potatoes. The recipe is found in the “Home Production of Quality Meats and Sausages”, p 259 if you and Phil are into making your own sausages. Those peels will not be wasted. Thank you for all your videos. I am learning a lot about canning from you. Knew absolutely nothing about it before watching your videos.

    Oh my word!! 😂 I have always used my grandmother’s very old “can grabber” which is all metal and flat on top… I got a “modern” one and I’m like, oh, I don’t really like these… I’m going to just use grandma’s. …..I have watched your channel and other channels hundreds of times by now and I just noticed near the end of your video I WAS USING THOSE NEW CAN GRABBER UPSIDE DOWN! 😂 Ahhahahaha!! I’m dying! 😂🤦🏻‍♀️

    1. I don't peel my golden potatoes, for what it's worth. Is there a reason you do?
    2. Simple but genius to do them in French fry shapes! I've only ever cubed them. I can't wait to try this!

      1. It is not safe and approved to can any potatoes with the skins on.

    I soak my potatoes in cold water for a long time it helps with the starch

    I also put them in soup.I also put them in the air fryer and oven.I put ranch dry mix and parmesan cheese on them and olive oil and air dry them.

    Awesome ~ somebody else on the planet who does not use a potato peeler. I much prefer to use a paring knife. Let the paint dry, lol. Thanks again for another fab video. 😄

    Ah Ha!!!! I have had more fails since I got my new gas stove. Now I know why. The heat is hard to control and there is a limit as to how low I can turn it down. I do sit here and watch but it is too quick how the pressure can rise. I have had to actually turn off the flame to start bringing down the pressure. I only let it go down a couple of psi before I turn it on low again. If I had only known this I would have kept my old stove. I don't think this one has a "sweet spot".

    I add a little rice or stale bread to potato water and cook it and feed my chickens.

    I loved the thickness you cut your peals. My neighbors are potato farmers who advises that to avoid the many items sprayed on them.

    I have had several jars siphon (chicken and broth), but they all were sealed the next day. So I figured they are good. 🤷🏻‍♀️ I hope so. 😬🤞

    My potatoes were growing…so I planted them! If I have enough jars when potato harvest time comes around I will can some to see if we like them.
