    I did it!! 🙌 I did it, and it was not nearly as intimidating as it seemed, and so much easier than I expected! Thanks so very much for taking the time to put this video together. I now have a skill for the rest of my life that no-one can ever take away from me. I think this is going to be a giant game changer.

      Guildbrook Farm Thank you! After the potatoes, I found bags of mixed greens on clearance, so I bought them all, and I just kept canning! I am unstoppable!! Haha

      I’m the next in line for pressure canning potatoes. I’m so excited about this because where I live we can get 25 pound boxes of spuds for next to nothing. Or maybe it’s 50 pounds. Anyway, next week I’m doing this project. Thanks for the inspiration ladies. Wish me luck 🦋💜

    I am an 87-year-old French woman who's been canning all her life and I love the youthful enthusiasm you put into your canning. You're doing a great job and I love to watch. I would just have two things to say. First; in your 101 tutorial you are recommending not to use the jars with the lids fixed through a wire and a rubber ring. That's what's been available here from times immemorial and they've been working just fine for me. That being said for whatever it's worth. Second, you're always stopping short of opening one of your jars; I would be grateful if you could do that in one of your future videos to show the consistency of the finished products and also how you open a jar without damaging the rubber seal of the lid so that you can re-use it. That would help me switch to the kind of jars you're recommending and using...and that I've always stayed shy of. Great job anyway, thanks a lot.

      Just a quick note to update you on my canning experience. So far, I've only used my pressure canner as a water bath canner, but at least I've gotten started. First, my son-in-law bought 25 pounds of peaches, and as my contribution to using those, I canned 6 half-pints of peach butter. Delicious! I then made pickled cabbage and peppers, salsa, and roasted red pepper spread. Sprouts had red bell peppers on sale 3 for $1, so it was great to be able to make something that would normally be kind of pricey so inexpensively. I'm already hooked!

    I noticed that when you were chopping the potatoes your board was moving around, if you put a damp tea towel or a cloth under your board it will stop your board from moving. As a chef I can tell you it's a much safer way so you are less likely to cut yourself

    At 6:27 I had a sudden realization that she just taught me how to can potatoes, LOL. Seriously, that was the defining moment when I realized I have successfully grasped the process/ and that I can actually see myself doing it... thanks Jaime I'm on a mission to learn how to can stuff and I'm starting with potatoes. I started with your "start with this one canning 101" video :)

    My husband canned our organic garden red white and blue potatoes using this method from this video about a month ago. We popped open our first quart jar for dinner tonight, simply added two teaspoons of butter and a sprinkle of parsley. Ok my YUMMINESS! They were a hit! We will continue to use your method from now on. Thank you so much!

    Great video! I canned potatoes for the first time last month, but I soaked them and rinsed them a couple of times for 2 hours prior to par cooking and canning. One month after canning they had absolutely no starch in the jar develop. I was really pleased with the result by adding this step.

    I have still made "fries" from canned potatoes. They are actually roasted but since that is how I do fries anyway, doing the canned ones this way is good too. I just toss them with some olive oil and salt, sometimes some spices and put them on a jelly roll pan and bake at around 400 or 450 (depending on size of potatoes) until they are lightly brown.

    Great video! I love your canning videos! Use a damp towel under your cutting board. It will hold your board stable and won’t slide around. Also when you cut potatoes slice first on side and flip the potato to that side. Being flat will keep your potato stable too. To clean your pressure canner use water with a 1/4 cup of lemon juice and a two tablespoons of cream of tartar. Bring to boil and reduce to simmer and boil till stains are gone. If old stains they may not all go away but most will.

    Jamie, thanks so much for your canning videos. I've started canning and followed your instructions. Pressure canned roast were excellent. Just finished chicken today. I hope you can add some new ones. Perfect pacing, simple directions, and great recipes. I hope you're both doing well and keep encouraging people to get out of their comfort zones. We might not all be homesteaders, but as one of the newly retired, I am saving money and making good use of my time learning to can.

    Thanks for this in that as I watch you videos, you take the "spooky stuff" out of Canning and preps. You are so humble about what you do. I watch other channels and it seems to be all about them. It is like they have some inside track or special knowledge that only they know. Watching them is very intimidating scaring folks out od even trying. I watched you bone broth video. Followed your steps and it worked like a charm! Thanks much!

    Just an FYI regarding heating the seals, Ball does not recommend it any longer.
    Per their site: "Preheating lids is not required. After extensive testing by our Quality Assurance Team, we found that it is no longer necessary to pre-warm lids before use."

    Awesome instructions. I like that you repeat the basic 101 instructions. 921 All-American is great. 1st time canner. 65yrs old retired from Videography. Your camera angles are great and audio is clear. The out-take bloopers make it real. I've done potatoes 🥔 and ground beef. Onward to soups and chuck roast. Great help and you made it simple. Never knew bad potatoes were called "rotters". 🤪Everything I've done has turned out like yours 🙂. So. Cal has no basements so I store in larger yellow/black bins in a closet ready for an earthquake 🙃. Thanks

    I first saw you pressure canning something about two months ago. I was fascinated and began watching all videos on pressure canning. I have bought one and am loving it. Your videos are informative and precise. I love the way you explain different things, even how you choose when to do potatoes. I am getting ready to do pot roast tomorrow. Thank you for the inspiration and giving me the courage to try it. It is fantastic. I don't like driving in the winter and am making all things to have in my pantry so I don't have to derive if I choose not to,

    Thank you for showing that website. You are a great teacher. I've watched tons of canning videos and you are the ONLY one who not only went thru the website but also showed how to check you potatoes and what to do. Growing up, we had a potato farmer across the street. After he harvested his field, he allowed us to go in there field and gather anything that his harvester did not get. My mom was a bit single parent almost my entire life. And being able to get these potatoes helped us. Mom was a canner, and back then, there was no internet, so she did it trial and error with how to can the potatoes. After she figured it out it was great. She called homemade spaghetti sauce, potatoes, green beans, corn, and a relish type of recipe. She never pressure canned if I remember correctly. She always used a coleman portable camping propane stove outside and used a huge canning pot.

    Hi Jamie, letting you know I used your method for canning potatoes and they turned out fantastic, I used citrate powder. Today I tried my hand at pork, just waiting for the canned to vent. I deboned a pork picnic shoulder then precooked it in the oven. To the jars I added chopped shallots, meat with the juices and topped with Montreal steak spice.boiling water. And I’m cooking the bone with the usual veggies for broth which I will pressure can tomorrow once it’s had a chance to cool. Thanks so much, I love your channel and so glad to have found out about the canning site.

      I actually took up pressure canning because my husband and I were moving across the United States. (from WA to PA) I had a freezer full of food, that I didn't want to go to waste, and started watching this channel. Jamie was so thorough on HOW TO, so I canned up everything I could, to save it for the move. . I AM SO GLAD I DID! What with the Virus going around, I haven't stopped canning! lol. I guess you could say, it's my "Happy Place". I believe once you start, and you see what YOU did, you aren't going to want to stop! I know I sure don't! lol Good luck to you :)

    You know Jaime, I tried the potatoes, I didn't think I liked them or would do them again. After trying them in soups, I loved them! I'm definitely doing them again. It was so convenient to just go get a jar or two and add them to soup. Thank you for the video! I love the idea of tying the weight to the canner :)

    thank for all your videos. just a tip for potato storage that works for me, throw in a whole apple with the the box of potatoes. this slows the growth of eyes.

    This is a wonderfully detailed video. However, if you wish to get a little better results-always use cold water and heat it up to boiling for canning use. Hot water in any water tank destroys the tanks over time and causes rust and metal to fall into your water tank and therefore into your hot water you are going to can with. This does not occur in the cold water lines. Just a thought for your mind.

I dont think some of those in other videos realise the science involved. Excellent that you clarified not having to unnecessarily sterilize lids and jars before pressure canning. I was scratching my head wondering why others were doing this. Lol

    we waterbath can our potatoes here in the netherlands, since there are no pressure canners. We peel snd cut the potatoes, then rinse them 5-7 times until no starch come off of them anymore. Put them in the jar , cold , and add cold water. Then waterbath csn for 99 min 100 degrees Celsius.

I haven't taken the leap yet but I really want to, so I am doing some research and watching videos on how to do it (ALOT of your videos...lol) I was always so scared (intimidated is a better word) to start but there are so many possibilities of how to use the canned food AND feeling the security of having my own stash of long term food for my family...especially now a days....is a little stronger then my anxiety on starting!!     you can can french fry cut potatoes! just drain and fry, they work great! You do everything else as you show in the video, but just cut them into fries rather than cubed etc

    Hi, Jaime!
    My girlfriend and I followed your video today, to the letter, and canned 8 beautiful quarts of plain Yukon Golds and 8 pint and a half jars of Yukons with garlic cloves and garlic powder (she loves garlic). Not a single jar showed any evidence of siphoning.
    We had a great time, and plan to do more soon! Thanks for all you do to educate those of us who want to learn properly!

    Very well done! I've been canning for 30 yrs, I guess, and still found myself watching all the way through! I have the exact same canner. Sucker is heavy when it's full, huh! Love my AA 921! My kids are already fighting over who gets it when the old man goes.....

    Hi Jamie! Thanks for the video! I canned white potatoes at the beginning of this month. I also canned some of the white potatoes with baby carrots! (Processing time is almost the same for both of those!) That way, I can have potatoes & carrots with butter any time I want!! I've only been canning since October 2016, but I'm having fun with it! I've canned Chicken, Chicken Bone Broth, Tomatoes, & Balsamic Onion Jam (which is VERY good)!!

    Wow you are such an amazing and inspirational teacher. You make it look so easy, as if you’ve been doing this forever. I’ve never canned anything but I sure would love to. Currently I’m in the hospital with pneumonia and I’m binge watching all your videos. We love potatoes so I’m gonna do it!!! I’ll keep you posted and please keep up your awesome videos. I love them

    You can find citric acid at Indian grocery stores. We use them in pickling.

      You can find citric acid in any super market just find where the herbs and spices are

      @Nytram Nytram4348 Indian stores sells it cheap. You can find a big bag of 99.8% pure citric acid for the same price you pay for a small bottle at other stores.

    Wanted to chime in with another Thanks!!! The strainer suggestion really saves time vs scooping and I didn't know I could substitute citric for ascorbic acids! Yes!

    Do you boil them for 2 minutes or start timing as soon as you put them in the pan?

    Thanks so much for putting this up, because of your videos I got the 950, I have canned meat stock several times, the bags were taking up a lot of room in my freezers. Tonight was the first time i did potatoes. They are still cooling but I still wanted to say thanks for all the great videos.

    I love step by step videos. Thanks for sharing. Couple questions: If I don't pre cook them for 2 minutes will it be safe? will they have too much starch left in them? Can I add fresh or powdered onion to them before canning? will that change the canning time or safety of the potatos? Guess you can tell i'm a novice level canner.

      You should preheat the potatoes and feel free to add any spiced. Just know some spices can go "off" when canning. Best to add when reheating.

      Oh my gosh. I'm so sorry this posted multiple times. I am located very close to the upcoming eclipse epicenter and in this past week we have been experiencing a large influx of people to our "little" area. We are expecting to receive about 1.5 million visitors to this area. All the internet/cell phone usage is messing up our towers. I kept getting an error saying this message didn't post. Thanks for responding kindly in spite of the duplicates :D I will add the spices when consuming as you recommend.

    This is the video that inspired me to get a pressure canner. My Husband and I canned potatoes for the first time yesterday and we are so excited to be able to have out own prepared food on demand. We can not wait until the fall and winter next year when we are canning from our own garden. We really love your channel and were thrilled for you when moved to your new home.     Guildbrook Farm I have canned potatoes before but today I canned 20 pounds of russets and they turned out fabulous thanks to your process, Jaime. I will be doing it just like this from now until forever. Thank you for the wonderful, informative video.
