  • Dry canned potatoes will taste just like fresh potatoes from your pantry. Sautee them with a little bit of oil, coat them in flour and roast in the oven.....The possibilities are endless!

    Great tutorial! Dry canned potatoes also make an easy potato salad if nothing is added to them when canned.

      Aren't they great! I get mine from a large Mennonite store in big sleeves and its even cheaper than from the company, they must get a bulk discount because they order them by the pallet.

    I did a test batch to make sure we liked the dry canning....We LOVE it! Tonight I spiced it up a bit by adding Cajun seasoning so some...YUMMM!

      I used to go by the book for preserving but then when you think about the govt agencies that are supposed to protect us, it makes you start questioning things. I think I’ll go with history and how my great grandmother did things!

    I have an All American canner given to me recently ... you've inspired me to try it out -- just need to harvest the potatoes. I'm not fond of frozen potatoes and they last a long time in cool storage because I'm in BC but the fresher tasting the better.

    Wow, they look perfect after the canning process. I’ve never canned potatoes or even thought about canning them, this gives me options since I have quite a few this years. This the second time I’ve seen someone use Superb canning lids. They look like quality lids. I’ve used Ball of course and last year tried the ForJars lids and they were fine. Thanks for sharing. I enjoy learning new techniques and new items to try.

      The superb lids are definitely a lot more well made than the ball lids. If you can buy them in bulk, you’ll get them for a cheaper price than even the ball lids:)

    My biggest question with cold packing food - I don’t have a dishwasher to pre-sterilize my jars. Is that an issue?
    Should I hand wash, then boil, then cool my jars, before cold packing?
    Any other pressure or water bath canning I’ve done has all been hot pack.

    Very interesting! My hubby and I have been canning for a while but haven't seen dry canning. Then only type of potatoes we grow are sweet. Currently we slice and flash freeze them. Wondering your thoughts on using this method for them. Thanks!

      I really like the dry canned potatoes. They don’t take up any freezer space, are shelf stable, and cook up just like fresh. I did one year blanch and freeze but when I would thaw them, they tended to fall apart. I prefer the canned, but perhaps if I flash freezer and then cooked them from frozen I might have a better result:) Hope this helps!

    This is great!! I planted a lot of potatoes this year. I wonder if this would work for sweet potatoes as well. It's a head start in the kitchen for frying, breakfast burritos, etc. Love it!!

      I’ve never tried sweet potatoes in this way. They tend to store very well for us so I just throw them in a box and pull from them for the entire year until the next harvest season:)

    Can we skip the butter? I think oil shortens the shelf life of canned goods, right?

      Typically I would say yes but I am honestly not sure. I just reread the Canning Divas article and recipe on dry canned potatoes and I don’t see any answer to this question. So sorry I am not more help:(

      I don't think so. I can butter and lard and is still perfect 5 years later. Have yet to have and go bad.

    Can green peas and green beans be dry canned as well?

      I did dry can some green beans this year. This one has not been tested so just understand that before you attempt it:) I have never attempted peas

      @@MorganHillFarmsI have canned peas and every single jar ended up eventually losing it seal and rotting. Idk if peas build up a gas in the jars or what but it was a waste of time and money.

    I wonder if she could look into dry canning squash and zucchini… that might be a game changer for preserving those items!

      I just successfully dry packed carrots without adding butter (our preference) or anything. They (air fryer) baked and roasted up beautifully with olive oil and maple syrup. I don't see why squash wouldn't do the same thing.
      The potatoes turn out amazing as well. Making a 2nd batch this weekend. 1st was russets and this one white potatoes. I also use pints for just about everything as there's only 2 of us.

    I did everything you did but the lime juice. I didn't have any. My potatoes turned brown after canning them. Are they still good?

      I’ve seen this happen to people before. I’ve heard that they are just fine to eat. It is just that the oxygen got to them and oxidized them, causing the brown color.

      Citric acid works great at preventing any discoloration of potatoes. You can buy it as a powder add 1 to 1.5 Tablespoons per gallon of water.

    Love the overalls that you always have, what brand are they?
    I have that book, lots of great info, of course "they" say you can't/shouldn't do this, bah to them. Superb lids, fantastic!

      @@MorganHillFarms it really does have some wonderful recipes. I'm looking into roundhouse overalls as they are USA grown cotton and made in the USA. Fingers crossed I size them right for myself. 😁

    Pressure canners have always scared me (ditto on pressure cookers) so I finally invested in the Presto electric pressure canner. This will be my first attempt at using it!

      After pressure canning for a while now, I actually find that many things are easier that you pressure can than waterbath. Many things are raw packed and have a very easy prep! So glad you made the leap and are going to try it out:)

    I know people who dry can meat, such as deer meat. They're in their 70s and are alive and well. Dry canning must be ok.

      10lbs of pressure at my elevation which is below 1000 feet
