I myself am the least bit Italian in the world and say all those things because that's how it's said in the area I grew up in. So go pound sand. This kid is a pizza legend - and if you don't like him, why watch?!
I attempted this recipe last night. My dough was absolutely terrible, but despite all that it was probably the best calzone I made in years!

Thanks for the dough recipe for home. I grew up making pizza on 18th ave in Bensonhurst and always made large batches of dough. I needed a smaller batch and your measurements worked perfect. Now living in Kansas, my family gets the best pizza in town, right at home. Ciao!

The way he's pronouncing it derives from the Sicilian or Calabrian dialects (most Americans of Italian origin are descended from immigrants from these regions). The majority of Italian speakers will pronounce "mozzarella" and "ricotta" exactly as here spelt, which also correlates with the official standard.
So what it comes down to is whether or not regional dialects count as 'correct' Italian or not.

His pronouncing is nothing like Siciliano or Calabrese AT ALL.
He has the typical broken american pronunciation, there's not a single italian existent that speaks like that.

Different dialectic pronunciations spoken in the south west of Italy were preserved in the US where they remain rare or became extinct in Italy itself. I studied this exact phenomenon as part of my thesis in comparative linguistics, and all of these phonetic variants and precisely how they evolved are extremely well-documented, so whether *you* as an individual are familiar with it is irrelevant. Look it up if you don't believe me.

Love how he puts to effort into pronouncing ricotta and mozzarella with Italian pronunciation and still says CALZOWN like a murican. Whatever he calls them they look good
It's more pretentious of him to say ricotta and mozzarella in the Italian way when speaking English. You know they're English words too.

Anchovies in pizza sauce makes all the difference in the world. No one knows they are in there but it adds incredible depth of flavor.

Pizza night in my house- I make enough dough for 4 large pizzas....2 for the night of, and the leftover dough I let ferment in the fridge a few days and make another 2. I'm thinking we're gonna do CALZONES instead! Yessir thank you for the ideas and tips! Much appreciation!

when I make my calzones I use a lot of meat. shaved steak, seasoned ground beef, pepperoni, ham and bacon. then I add some cheeses. mozzarella, cheddar, provolone and parmesan. I also add a little marinara. basically I make an enclosed meat lovers pizza.
