  • Craving a pizza fix, but want something a little different? Look no further than calzones! We will show you how to make a calzone the way we did back in Brooklyn. These delicious hand-held pockets of pizza goodness are perfect for a satisfying snack or meal.
    In this video, we’ll show you how to make easy and delicious calzones. We'll start with a simple pizza dough recipe listed below along with a video link, but feel free to use your favorite store-bought dough if you're short on time. Finally, we'll bake the calzones to golden perfection and enjoy them with our tomato sauce for dipping sauce, which is also in the link below.
    So, whether you're a pizza lover or just looking for a fun and tasty new recipe, give calzones a try! They're easy to make, fun, and delicious.

    Ingredients: (6 Calzones)
    • 6 cups (720 grams) of High-Gluten flour
    • 17 fluid ounces of lukewarm bottled water (98 degrees F)
    • 0.25 oz. (7 grams) of dried yeast
    • 2 tsp. (11.38 grams) of sugar
    • 2 tsp. (11.38 grams) of salt
    • 2 TBSP of EVOO
    Directions:
    1. In a large mixing bowl, dissolve the yeast in lukewarm water.
    2. Once yeast is dissolved, add sugar, and stir until totally dissolved.
    3. Then, add the salt and mix until dissolved.
    4. Add olive oil and flour.
    5. Mix for 10 minutes.
    6. Once the dough is ready, cover and let rest for 15 minutes.
    7. Remove dough from bowl, cut into 6 equal pieces and then form into balls.
    8. Place dough ball into a tray or bowls with EVOO and then cover airtight.
    9. Let the dough rise for approx.20-25 minutes before placing it in refrigeration.
    10. Dough must remain in refrigerator for 24 hours before using NY-Style Pizza
    Calzone Ingredients:
    • 6 (5 oz.) dough balls
    • 32 oz of whole-milk ricotta
    • Salt & Pepper to taste
    • 1 TBSP of Chopped Italian parsley
    • 1 lb. of mozzarella
    • ½ lb. of Provolone
    • ½ lb. of Fontina
    • Ham
    • Italian Sausage
    Directions:
    1. Add parsley and then salt & pepper to taste into ricotta (mix well).
    2. Stretch dough out evenly about 10 inches.
    3. Add ricotta, topping and then cheese blend.
    4. Fold dough over evenly, and then seal dough by pressing firmly with fingers and then with a fork.
    5. Preheat oven to 450 degrees F and cook for 20-30 minutes or until golden brown.
    6. Enjoy!

    I traveled to almost every state in the USA and I’m finding out that there is basically only three states in the United States that has pizza shops that make good calzones .New York, New Jersey and Pennsylvania. The same with cheese steaks and pizza lol. How’s Texas pizza shops. In Nj where I live now there is a pizza shop around every corner in the small town I live in there is 15 that I tried there is at least 8 more that I haven’t lol. Guys have a blessed day .

      Like New York here in Texas we have a Mexican or taco stand around every corner. It’s hard to find good pizza.

    When I was 10 in '78 I found out a kid could fold boxes at his neighbors pizza place and eat all the slices I could. A couple of weeks later, something happened and I started working the front counter and the oven for slices. We made fried calzones and the best wedges ever back in my days in North Yonkers. Those were the days...
    A wedge in Yonkers is just a long roll sandwich. We had our own name for a mostly common sandwich. Not sure how many calzones per year but it was high double digits. ❤

    You guys are killing me here! Haven't had a calzone since i i left Jersey. Now that's the way ya do it . Lotsa ricotta mozzarella and ham sauce on the side. In California, La its a freaking wasteland for calzones. Don't get me started lol ! Bravo dude's ❤❤

    Looks delicious. I grew up in New Jersey and my father used to go to the pizzeria and get us zeppole. Deep fried balls of dough thrown in a bag and covered in powdered sugar. Is there a recipe you have for these?

      I was gonna ask that . … I made little mini ones and deep fried …. probably over cooked cause it was a bit tough , but still yummy

    What is the "difference" between a Calzone and a "Stromboli" ??? Anybody answer please 🙏.

      Not really much of a difference. It’s all folded dough basically but the calzone has ricotta cheese, and the Stromboli does not.
