She was born in 1881- my father was born in 1922, the youngest of 12 children. She passed in 1962 at the age of 81 yrs old. I was twelve. Thanksgiving has never been the same ;)

I still want to figure out how to make videos on youtube to teach what I still remember. I still can my own soups, stews, meat, jams and jellies. Up until the pandemic I was teaching home canning at university skill fairs and at the local Fry's Grocery store (Kroger on the east coast) None of my friends cook so they find ways to invite themselves over for dinner, which I love. When I serve a meal they look at me like I'm half crazy and half magician. Maybe I am. I'm 69 years old and still work full time as an RN. I just don't stop. I only rest while bread is rising.
1.) favorite fillings....ricotta, mushroom, & ham, is always a good one! 2.)Issues...? I had an issue where the edge of the calzone was a little under cooked (cause of the rolled up seal I did) where the rest was golden, craunchy & ready!
i love to overload it i learned and loved it like : extra cheese, extra tomate sauce, hot salami, minced meat, peperoni (hot pepers), mushrooms and in the old version even Prosciutto but that i leave out when i make it myselfe. its my favorite kind of pizza and i only love it selfemade because its the only way i get it tastes exactly how i eat it first time !

Witch poolish dough recipe was that? I tryed the one he did with Roberto Susta Biga vs Poolish, and used Caputo Cuoco on both, Biga got perfect, but the poolish got tasteless..

What you put inside your calzone?
what's your issues when you make calzone ?

Issues: none so far.

I didn't see where he put the salami either. I suspect the Romano was sprinkled inside as well as the salami
