Super Quick Easy and delicious Chicken and Broccoli Pasta 🥦 😋

  • Healthy High-Protein Chicken and Broccoli Pasta
    Servings: 4
    Ingredients:
    2 chicken breasts, cut into small pieces
    2 tsp paprika
    1 tsp mixed herbs
    1 tsp piri piri seasoning
    1 tsp salt
    2 tbsp olive oil
    1 onion, chopped
    3 garlic cloves, minced
    200g pasta (your choice)
    1/2 head of broccoli, chopped
    165g lightest Philadelphia cream cheese
    1/2 cup pasta water
    Instructions:
    Season and Cook the Chicken:
    In a bowl, mix the chicken pieces with paprika, mixed herbs, piri piri seasoning, and salt until evenly coated.
    Heat 2 tablespoons of olive oil in a large skillet over medium heat.
    Add the chopped onion and minced garlic to the skillet and sauté until golden brown.
    Cook the Chicken:
    Add the seasoned chicken to the skillet.
    Cook for around 5 minutes, stirring frequently, until the chicken is thoroughly cooked.
    Cook the Pasta and Broccoli:
    Cook 200g of pasta according to the package instructions.
    Two minutes before the pasta is done, add the chopped broccoli to the boiling water.
    Prepare the Sauce:
    Drain the pasta and broccoli, reserving 1/2 cup of the pasta water.
    Add 165g of lightest Philadelphia cream cheese to the skillet with the chicken and mix well until the cheese is melted.
    Gradually add the reserved pasta water to the skillet, stirring until the sauce thickens.
    Combine and Serve:
    Add the cooked pasta and broccoli to the skillet.
    Mix everything thoroughly until well combined.
    Divide the pasta into four servings and enjoy!
