I made these the other day. Mixed worstsistersauce , diced white onions, kewpie mayo, panko amd 1 egg with the meat. Cooked it in the pan like this lady did. Then added cheese and put that in a 400d oven till the cheese melted. ( was easier to make 6 of them at the same time on a sheet pan and keep the tortilla crunchy) My sauce was 1 part kewpie, 1 part dukes ( or any whole fat mayo), 1 part ketsup, 1 tsp pickle juice with some diced pickles) , 2 tbsp spicy mustard and a shake of paprika. Topped it with pickled red onions, tomatoes(salted) and romain. Theres a 1000 ways to make it. Ive tried a few but this is the fam fav. We even put silken tofu into the meat to add a bit a smooth texture and flavore to it. Kind of like making Japanes hamburger steak. Drown it in some Yakisoba sause or a homemade demiglaze, and its amazing.
