- Hi Guys, today I’ll show you how to make Coconut Rice Pudding in a Rice Cooker. RECIPE: anitacooks.com... All the ingredients are listed below. This pudding can be eaten warm, at room temperature or chilled.

Ingredients
½ cup or 90g long grain rice - I used Basmati
1 cup water - 236 ml
Pinch of salt
3 tablespoons cashew pieces
3 tablespoons golden raisins
1 teaspoon ghee
8 cardamom pods
13.5 oz or 400 ml full fat coconut milk
¼ - ½ cup or 50g - 100g white sugar

Is it important to cook the rice in water beforehand? I was wondering if it would be the same if I just cooked the rice in the coconut milk?
Hi Rachel, the rice should be cooked in water first because it will not cook properly in the coconut milk. It would take a lot of coconut milk and time plus you would need to add water with the coconut milk when cooking rice.
