Thank you for this recipe. I needed a suggested guide to make rice pudding. Because of diabetes I used brown rice or steel cut oats and coconut sugar. I needed the cooking method more than the recipe. I can't eat eggs either. It was creamy, just sweet enough, and refreshing.

I love the IP duo plus no need to turn the seal nob. All automatic. You taught me to be confident in using my IP and am loving it. Have done the pudding before with just coconut milk and home made peanut butter so yummy.
Thank you. I wanted to know how to cook rice pudding in my new instant pot. It looks delicious and when i buy the coconut i will try it. What supprised me was how different it was from our English rice pudding. Traditionall we use round rice (called Pudding rice here). It thickens because we add milk to the uncooked rice and that thickens it. It is cooked in the oven for about 1 hour on a very low heat . it then has a skin on the top which goes brown at the edge and tastes wonderful. So Long grain or shrt round grain? So you can see why in needed you help here. I love your videos. We are Vegan by the way and i would have used almond milk so i cannot wait to try this.

I use the whisk attachment from my mixer too. Don’t need a bunch of clutter lying around.

Omg this was delicious. We made this vegan by using cornstarch to thicken it as you suggested and it worked really well.
