Sütlaç: Milky Inside, Caramelized on Top! Turkish Oven Baked Rice Pudding | SO EASY and Gluten Free!

  • You could probably tell just how much I adore today's recipe from the first 20 seconds of the video, because it is one of my absolute all time favorite dessert recipes! It's called "sütlaç," a type of rice pudding, and it's the Turkish take on one of the lightest, milkiest, and delicious desserts out there - ALSO, we're going to be making a version of it, or a family heirloom recipe I should say, and it's called "Bahti." It's cooked on very low heat in pressure cooker for hours in order to achieve this insanely delicious, caramelized taste, and it allows you to make this bahti inspired rice pudding in half an hour 😍 Enjoy today's episode and don't forget to let us know what you think!

    Oven Baked Sütlaç:
    150 g rice (4/5 cup, 165-170 g, for lower starch content rice like basmati. 130-135 g, for higher starch content rice, like arborio)
    1 l milk (4 cups), at least 3% fat content
    500 ml water (2 cups)
    300 g sugar (1,5 cups)
    To garnish,
    Roasted hazelnut, chopped
    3-4 pieces of mastic, optional (also known as mastic tears. Mastic is some sort of a tree resin used to give flavour especially to desserts. You can find it in Turkish and Greek stores or order online)
    • Add the rice and water to a large pot. Let the rice cook for about 30 minutes on low heat until almost all water is absorbed. Put the lid on with a little bit of space to let the air flow and prevent it from boiling over.
    • Pour in the milk and add the sugar. If you use mastic, add it in at this step. Freeze the mastic for at least 15 minutes and mash with pestle and mortar.
    • Give it a stir and cook for another 30 minutes. Place a wooden spoon across the top of the pot to prevent it from boiling over.
    • Meanwhile, preheat your oven to 230C (445F) on grill mode.
    •Transfer the mixture to oven proof bowls or ramekins, leaving 1/2 cm (1/5 in) space at the top. Stir the mixture after each filling to distribute the rice evenly to each bowl.
    • Pop the air bubbles with a toothpick, if there’s any.
    • Transfer the bowls in a deep tray and place the tray into the highest rack of your oven. Pour enough hot water into the tray to cover halfway through the bowls. This will keep the oven moist and prevent the cracking or overcooking of the sütlaç.
    • Bake until the tops are dark brown and remove from the oven.
    • Let it cooldown to room temperature, then refrigerate for at least 2 hours, ideally overnight.
    • Serve cold with roasted hazelnuts.
    Bahti Inspired Caramelized Sütlaç:
    150 g rice (4/5 cup)
    1 l milk (4 cups)
    150 g sugar (3/4 cup)
    • Pour in 1 cup of milk with rice in a pressure cooker. Set the pressure to high and cook on low heat for 12 minutes after making sure that the lid is tight and the pressure is enough to cook.
    • Release the pressure by removing the lid or putting the pan under running cold water.
    • Add in the sugar and the rest of the milk. Give it a stir and again cook on high pressure for another 15 minutes after the lid is tight.
    • Release the pressure and transfer the sütlaç to bowls. You can bake them as well, just like the traditional sütlaç.
    • Let it cool down to room temperature then refrigerate at least 2 hours. Serve cold.

    I’m Palestinian we make this too it called rouz bi haleeb which translates to rice in milk we add rose water or orange blossom water 🌹🌸 and top with pistachios. My favourite childhood Food.

      I don't think that the Canaanites ever actually "left". There's a school of thought that the Phoenicians were actually Canaanites, and the Phoenicians settled around the Mediterranean, including Cyprus. So Cypriot, Lebanese & Palestinian people include "Canaanite" heritage among them.

      The mahalebi is actually a common light desert in Cyprus during summer. The desert is always cold and they put rose cordial to make it sweet.

      🤤🤤hmm can I use some almond/ rice/ coconut/ milk instead of cowmilk? My baby has allergy to milk protein so I can't cook alot of dishes ..

      @@hyyacinthusa7324 Try milk you like. I would use coconut milk or at least a combination of milks that have enough fat to make the pudding delicious. In the beginning she mentioned that 3% milk is what she had but a richer milk would be even better. I'm going to try mine with a combination of half full coconut milk and half Califia Farms toasted almond/coconut milk because I want the fat and the taste of the toasted almonds. If you try something that works, please share here. Thanks!

    This looks great! Here in France rice pudding is a staple dessert, and a favourite of mine! Your bahti recipe made me think of a speciality from Normandy called 'teurgoule', which is rice pudding heavily spiced with cinnamon and cooked for hours in a terracotta pot in a low oven... it's amazing to see the similarities between different cultures and parts of the world!

    My mother is from Spain and I grew up on rice pudding as an afternoon snack. As kids being raised in the United States, I often had to wait for Summer vacation to visit family in Spain to have rice pudding again. I will have to try to make it myself, but this time, successfully with your tips. I might even try a toasted coconut with coconut milk version with a bit of cinnamon and clove for a fun India inspired twist on my original favorite.

    In Argentina we call it arroz con leche. Some people add a little cinnamon or lemon zest to it, and some of us just add a huge spoonful of dulce de leche.

    In Greece we have a similar recipe, without the baking at the oven part. I am lactose intolerant so I use thick coconut canned milk witch gives a nice twist on the flavour . I also used arborio rice wich is very starchy and has huge grains that grow crazy big! I am very curious what will happen when the coconut milk burns, what can go wrong? Thanks again for the inspiration, I use your shawarma recipe twice a week and every time I say thank you Refika for making my life so easy and tasty! Stay strong, we are on this together!       So adding coconut milk in to rice you are making Sri Lankan traditional milk rice but no sugar in it n burning part how good it will be that u have to experiment yourself in our milk rice i love the burnt to golden brown part at the bottom of the pot 😃😃

      I just wrote a comment how in Moldova, we also have a similar rice dish, without baking it but boiling with milk and raisins or pear, it is also delicious, I grew eating it as a breakfast, but could easily be a dessert. Adding coconut milk sounds like a delish variation. It's so nice that they're so many variations of this dish, (appart those mentioned in this thread) even the Thai mango sticky rice😋

      My friend, almost all of your kitchen is mirrored by us, so I'm not surprised that you were under our rule for 600 years. We used to go to the same markets in the same neighborhoods, on the same streets.In other words, it is normal for you to take our culture, our food and say ours, but it would be more convincing if you put new names instead of adding 'ki' suffix next to Turkish names.

    I’m old now and back in the US these days, but many years ago (probably before all of you were born!) I was in Germany and getting on a train heading east (Istanbul Express!). Shortly after I boarded, a guest worker from Turkey offered me a serving of rice pudding. And truthfully it was the best rice pudding I’d ever had.     Thank you for opening up your recipes and for bringing your family's story and history to the world. Turkey should declare you their national treasure 🙂 I love your mission and your philosophy. I feel as you do... All my family, including my only son, have died, and no traditions were handed down to me - so I work with Sanctuary Kitchen, a local organization of women refugee chefs who are cooking all week, and selling their food online for curbside pickup, at local businesses, and at farmers markets across our town. Food is love, and universal ❤️

    The Can bit was absolutely amazing. I had no idea Anyone still connected to that group of people. Food customs and culture are my interest and I had always wondered what connections still go back (or clame to go back) to that culture. I live in modern day Israel and am definitely going to try this. I would really love to see or read how to make the original version - yes I am totally ready to spend hours trying to make it and any other dishes vwgich may Ecco back in time.

    I wish to one day visit Turkey and I hope to enjoy all these delicious food in their land of origin ( till then I'll just make a list).
    Also this dish is almost like another one my mother makes here in India, it's called Kheer, we add cardamom to it too, but we eat it hot as we don't bake it.

    I love that you are showing are commonalities and not what divides us. Food unites the world ( or at least it should if you have a heart) and I hope some day instead of war we can share our bounties and blessings in peace.     I'm from New Zealand ad I really love your video's. My mother was from Scotland and she use to make us rice pudding when we were young. She would put rice, milk, sugar and sultanas in to a bowl and cook it in the oven for about an hour. She loved the skin on top which was like the burnt skin on yours. She also loved to burn the custard, she thought it tasted like caramel, but we just thought it tasted burnt :-)
