The Soup Will SAVE THE WORLD! 🍵 Lentil Soup Recipe with a Variety of DELICIOUS Toppings!

  • Today I want to share with you, our number one soup; lentil soup. 🍵 I have never met anyone who doesn’t like this soup. It was one of the five dishes I loved when I was a child. It is very easy to make, cheap, nutritious and keeps you happy and warm for along time. Plus, with small tricks you can turn this soup into a fulfilling main course with low calories!

    Servings: 6-8
    Difficulty: Easy
    Prep time: 3 minutes
    Cooking time: 15-20 minutes
    2 cups red lentils
    8 cups water
    1 large onion, roughly chopped
    2 tablespoons butter
    2 tablespoons flour
    1 cup chicken stock
    1 heaped teaspoon salt
    • Rinse the lentils for about two minutes under cold running water to remove any excess dirt and starch.
    • Place the lentils and onion in a medium sized pot and fill with the water.
    • Boil for 10-15 minutes until it becomes a thick puree.
    • Collect the white foam forming on top while boiling. This foam gives the soup a greyish color and makes it harder to digest.
    • To make the meyane (roux), melt the butter in a pan and add the flour.
    • Cook for a couple of minutes until it smells like roasted nuts and becomes light brown.
    • Pour in the chicken stock into the pan and whisk constantly.
    • Add the mixture to the soup and season with the salt.
    • Lastly, blend the soup with an immersion blender till the texture becomes creamy and smooth.
    Your velvety lentil soup is ready and it is such a good base that you can top with many things and turn the soup into an incredible meal. For the classical one, top with red pepper flakes and squeeze some lemon. In Cyprus, it is really common and delicious to add black olives to soup and adding croutons is always a good idea. You can always sprinkle some roasted kadayif instead of croutons. If you want your soup as a main coarse, top with some meatballs, red beans and coriander. For a lighter version, salad, croutons and some sesame seeds would be great! Last but not least, Bahar’s favorite - yogurt, black pepper, red pepper, olives and parsley

    Canadian here. I love soup and I'll make this tomorrow. I've made so many of your recipes and they are always good. My favourite is the Menemem. I've made it many times and it was one of the last meals my mom had before she died this summer so it makes me remember her.

      I love lentil soup but I never add flour to it. To thicken my soup a little, I add 2-3 Tbsp of rice to cook with the lentils and when cooked I blend 1-2 cups of it and then add to the rest of the soup. I also add a little lemon juice as lemon adds another dimension to the soup 🇨🇾Maria

    I love, love, love red and yellow lentils. I’m Sicilian, we have so much Greek and Arabic influence in our dishes. When I make this I start with sautéing garlic, onion and red pepper flakes. Then I do the same as you I add tiny meatballs, or toasted almonds or walnuts, pieces of garlicky bread. I have to try the olives! I love you Refika! I pray that this is truly “healing soup” because the world can sure use it. Especially in America. Sending you love and beautiful vibes.❤️

    90 % of turkish families eat this plain type with lemon maybe croutons on it,,,, one more additional tip, sauteting washed lentils with sliced onions and oil (plus Diced medium carrot and potato optional) for 3-4 minutes before adding water (Keep an eye Dont Brown the lentils) , Really gives a super taste Just try,,,

      I also use carrot and potato in my version, as well as add some celery, the white part of one chard, and garnish with the leafy part of the chard once cooking is done before serving.

    Native Texan here! I found lentil soup recipe in a book at library. I was looking for recipes to feed my 4 children in the 80’s that was cheap! I remember paying 25 cents for 1 pound of lentils!! My children and I loved it and so did my grocery budget!😂

    This is very similar to daal. Daal chawal (lentil and rice) with achar (oil based pickles) and raita (yogurt salad) is one of the best meals ever. Much love from Pakistan.

      that sounds delicious. i have tried to make daal many times but it never tastes like home made. A friend from Pakistan made me some and some biryani and it was *incredible*!

      @@caitlinniciomhair9625 The secret to making a good daal is the "tadka" or tempering at the end. Tadka is made in a small pan by adding some spices and curry leaves in hot oil and pouring this to the boiled daal. Some practice and you will get it right.

      Dear MWC, there is a world of lentil soups out there, I wish you the best with discovering them, and I love Turkish lentil soup. It's unbelievable how versatile lentils are and it is amazing how many different types one can buy nowadays. Or at least where I live 😊. Even my regular supermarkets have a larger variety, not only the foodie speciality shop where I first saw them.
      On Refika's recipe, which I will definitely try with every of her suggested toppings: My Turkish friend Yildiz adds one or two potatoes to the soup which boils together with the lentils, not roux; and she does not add an onion. But then I guess that there are as many ways to cook Turkish mercimek corbasi as there are Turkish families or lovers of Turkish cuisine. I won't even start talking about all the other cuisines which offer lentil soups 🤤 I would like to recommend Andong from "My name is Andong" here on RUclips; he presents a Turkish lentil soup as served in Berlin, as another example.

    We grew up eating lentil soup. It was a predominant meal in our house hold, especially during lent season. We usually add turmeric, curry, and fried onion. It's delicious!

    There's a kebab shop near my home that makes this soup and i just love it. I've searched the internet for recipes but i never seem to get it right. This is the closest I've ever come! Thank you for sharing it! I had no idea it was so simple. The only thing i added was dried mint, because they do too. It's such a comforting soup!

    In India lentils cooked/raw are called "Dal", we boil it with some turmeric, salt and red pepper powder, once it's tender we heat clarified butter in a pan some cumin and chopped garlic when it turns brown we add it to the dal. People also add tomato, ginger, onion, green pepper, coriander while boiling the lentils or in the clarified butter if we like it chunky. We never puree it though, that's like evryday staple throughout the year for most people in the country. We eat it with flat bread or rice but I love to drink it like soup. I like the orange one the best.

    I’m Lebanese and we add sautéed onion and little rice ( for thickening ) at the end. The stock is added after the starch is scooped from the boiling lentils.

    I never liked lemon in savoury food, but this soup changed that. The lemon takes the soup from okay to extraordinary IMO.

    This video reminds me of a time I had a lady from Jerusalem staying with me I met at church. For our first meal together, she taught me how to make a soup very similar to this. As we sat at my table, we broke bread together eating that delicious soup that I still make on occasions . I haven't spoken to my friend in over 25 years. I pray she is doing well.❣

    This looks a lot like what we call 'masoor dal' in India. There is also a "whole" lentil version which is brown - basically the husk is not removed and it is more nutitious - you can make really hearty stews and thick soups with it, perfect for winter!

    We make something similar in Trinidad called Dhal. We add roasted cumin and sometimes fried split peas balls and call it Karhi.

    It will be a good idea to add kale , spinach or radish leaves 10 minutes bofore the soup is fully cooked to make it more nutritious

    This is now my go to soup for all these frigid Canadian winter days we’ve been getting. So far my favourite way is with lemon, red pepper and crispy onions! But there’s many more options to try. Thank you for sharing with us Refika!

      İ can recognize this part of Istanbul called Kuzguncuk, north of Üsküdar. Unfortunately İstanbul is not so green, but if you go northbound along the Bosphorus, you find nice green places like that.

      Honestly, as someone who grew up in Istanbul, when I first visited the bay area, specifically berkeley and SF, I honestly thought this is my second hometown in the world, I could live here and not miss Istanbul as much, cause they have a lot of similarities

    my noni used to make this for me as a child. She is 82 now I think I will try to make some for her and my mother. I seriously havent had lentil soup for decades.

    In Dominican Republic we do it with red beans and we add meat, plantain(platano ), also instead of meat we can use cured meat we put while boils so the taste sets.
    Try it with suchuk or salchichas.

    I'm addicted to your soup... Today I made it with fried graham bread croutons, bits of baked bell peppers, minced greens (parsley, basil, mint + lemon juice + olive oil) and - of course - olives. Very tasty, very fulfilling, Thanks!

    In my family we are used to making it with paper paste and I've always asked why in turkey it is so plain and so delicious. We will definately try it this way. (For best results take some sucuk with the soup like mezze) Greetings from Bulgaria. Love you.

      Some families add some pepper or tomato paste in Turkey too. Because it deepens the orange color and adds nutrition, my mom adds a carrot in it as well.

    I live in the state of Washington in America and love Lentil Soup but never made it myself until yesterday using this recipe. It was delicious plain and I would have enjoyed it that way until gone, but having all of the topping suggestions was wonderful. I never would have thought to add olives or any of the other ones. I only had a avocado and Kalmata olives at the time so they went in with some cayenne pepper and crunchy onions used on salads. Wonderful! Can’t wait to try some of the other ones. Just love watching the videos and seeing how much everyone enjoys making them.

    Love your videos. I've just discovered your channel but have already made green olive salad, lahmacun, red pepper bread, tahini tarator, and meatballs. Your videos are so helpful and fun. The kitchen smells amazing every time and my wife loves the food. I've been to Turkey 3 times and love the food so much. The problem has been finding a good Turkish restaurant outside Turkey. So that obviously means I have to do the cooking myself. I LOVE eating mezze-style. Please post lots of mezze dishes. We've eaten so many delicious foods in Turkey. :-)

    awesome video, ill definitely be making this with oil and veggie stock to make it vegan. The lemon on the side is such a great idea and also helps with nutrition because the vitamin c from the lemon helps your body absorb the iron from the lentils. Much love from Queens NY!
