I made this tonight for dinner and my husband LOVED! it so much. He was eating the soup straight from the pot. The bread dome was amazing too! Thank you sister Refika! From Kansas USA
This is authentic way of making "Ezo gelin" soup. Thanks to Refika it is really well portrayed. As Refika mentioned the soup called "Ezo the Bride". As you can guess there is real story behind it. Ezo gelin was born in 1900's at Turkey's southeast today's Syria border. (Those times Syria was part of the Ottoman Empire) Her real name was "Zöhre". Because of her beauty and cheerfulness, locals called her "EZO". She married when she was young the man she loved. Later every body called her "Ezo gelin" (Ezo the bride). They loved each other but unfortunately they divorced because of gossips and quarrels between their family. After that, a lot of man wants to marry her but she refused. 6 years later she said "ok" to one of her relatives who loves her since childhood. Ezo gelin moves to Syria to her husband's home. (At those times borders were open between Syria and Turkey and relatives can visit each others freely.) Her beauty was epic but what she is famous for her longing to her hometown. Because of WWII and border disputes between countries she never returned to her hometown for 20 years until she died from tuberculosis which was a very common sick at those times. There are a lot of songs and requiems after her. She lived most of her life between two wars so the food supply was very scarce. Not only she was beautiful but also she was good at making meals. She made this soup from whatever left in the kitchen. She died in 1956 and her body moved to Turkey in 1999 according to her wish. The soup is delicious and there is a melancholy in it.
It is our national Thanksgiving holiday here. No one in my family likes turkey. It is a waste of food to pretend. So, with my vegan niece showing up we decided we would make Ezogelin soup instead! The house is filled with a wonderful aroma as I am making it now. We will gather to give thanks in 6 hours which will allow the flavors to meld. Thank you Refika and friends for gracing our home in more ways than one.
It was unseasonably cold in Seattle, Washington this weekend, and I had all the ingredients in my pantry already, so I decided to try this soup. I just have 2 questions for you: How can such a simple soup taste so good? And how did I not know about it all of my life? Thank you, thank you! I will make this one again and again.
"Simple and delicious" are the two most important keywords of Turkish cuisine. Maybe there are richer and more developed food cultures in the world, but every minute you spend in Turkish cuisine is worth a lot. Meals with few and relatively inexpensive/easily accessible ingredients always surprise first-time tasters.
Refika! I am at a restaurant that serves Turkish food and I feel like an expert on the menu since I watch your channel! They have ezogelin! Lahmacun! Pide! So excited!
I'm so happy to see this, your earlier lentil soup recipe that you refer to in this video is an absolute hit here. You have the greatest energy of all RUclips cooks
@@Refika I made it last night and it was amazing - I had leftovers today and it was even better! It became a very thick consistency and the flavors mingled overnight.
I agree about her energy! I thought i was the only one to try something and jump around bc my brain will explode from all that goodness 😍😍😍her energy is out of the world!
I just made it today and it turned out delicious ❤️ Libyans eat a lot of Turkish food but this tastes nothing like what we have in restaurants 😁 it’s so cozy and hearty it feels like something my grandma would make ❤️
I made this. We’ve just finished eating. I followed your recipe to a T and it turned out fantastic!! My whole family loved it. It is a damp gray day here in Germany and this was exactly what we needed to lift our spirits. Thank you again for these wonderful recipes🤩💕You are just the best!
Hi Refika abla! I'm about to make Ezogelin soup and I want to say a couple of things. As a Turkish woman, I follow both of your channels on RUclips. I'm learning a lot from you as a foodie, including some English terms :) Also, I'm amazed the way you present our beautiful country and food culture. I'm usually reading the comments below your videos to see how people reacted and each time I have a smile on my face. Please keep going like this and bring us joy as well as delicious recipes from our amazing food culture! Greetings from Eskişehir :)
Thank you for the comforting video. I caught a cold and watched your soup video while eating instant soup. Your clay pot brought back memories of my mom cooking lentil curry in a clay pot over a wood fire at my hometown in Kerala, India.❤️❤️❤️
I love this channel Refika. Thank you for sharing the love, good food and happiness with us in those hard times. I was first watching just some of the episode randomly in Turkish version and then friend of mine told me there is also English channel so now I am watching both and I got so addicted. You and your team are such cool guys. I wish I could meet you one day in real life. All these recipes looks so delicious and the whole concept and the presentation is great. Wish you guys all the best and take care. With love from Prag.
Your videos are both wonderfull in terms of cooking - but also it reminds me about the best of Turkey - its wonderfull people. One day whe covid comes to an end - I will travel to Istanbul again and enjoy its wonders and friendliness! Thank you all!
I'm totally going to make this for Monday. It's predicted to be gloomy and about 3 degrees Celsius here. Thanks for the recipe! EDIT: I made this and it was soooooo good! I couldn't find the red pepper paste so I winged it by grinding up a roasted pimento pepper and a soaked dried chile.
I made this last night minus the bread top (I don't have a clay pot yet) it was absolutely delicious! Thanks for a great dinner! We're having it again tonight! 😋❤😋
Merhaba Refika, it's an absolutely yummy recipe, luckily I have clay pot as well, which I bought from Pakistan , cooking in the clay pot gives a unique aroma and more flavour, thanks for the recipe.
Just had to make it straight away as I love soup . Well it hits the taste buds and heaven in a spoonful . Bless you for your recipes and sharing with us . We are blessed 😊.
Yes!! I have a clay pot. I make soup all winter and I shall try this for sure. I have never seen bread on the top, I have an idea my family will love this. Once again Refika, thank you so much.
You desperately make me want to eat your dishes!!! I love eating and cooking, I've never visited your country nor tried Turkish food but I'd like to widen and vary my food options and you're giving me such great ideas!!! Please keep on like this ☺️
It is about to be Thanksgiving here. My mother always made dishes from other countries rather than a typical US meal. THIS would be something she would have made us and we would all be in awe over this marvelous meal. I will try making this in my sweet mother's honor. Thank you for sharing this beautiful piece of culinary art and culture. With Love and Thanksgiving... Cheers!
Excited to see this recipe! There used to be a Turkish restaurant in my area of Chicago that made this, in fact it was the first specifically Turkish food I ever had. They closed a long time ago and I've never seen it on any other menus around here since.
I went to Turkey once and had a soup in Cappadocia that was life changing and that I still dream about. Can't remember the name but it looks like this. The color and it had tiny little grains of something in it, like this one! Could it be my dream soup?! I will have to make it! 🤗😍 Hopefully I can find that grain here.🤞 Thank you, Refika. And thank you to your team. The video and edits are the best!
the best soup in the world 🥰 i always made it from instant soup packages but after saw your recipe i would try to make it myself. Thank You For Sharing ❤️ Lots of Love ❤️
I am so going to put this in my soup rotation :) I either make 2 soups a week (smaller batches) or 1 big one. My husband has soup before every meal. Thanks Refika
Thank You Refika (and the team) to share the idea for bread dome and this tasty soup. I try it in turkish restorant in Irak. When its very hot, the red paprika and mint make it special.
I grew up with homemade soup nearly all year and although I dont make it as much as my mum did while I was young I still adore the stuff. I will definitely have to give this recipe a try. It makes me feel warm even just while watching your video. Your timing is great as the colder weather is expected to hit here soon after a mild autumn. I don't have clay pot but thankfully I do have a big cast iron one woohoo. I'm really hungry now, not that that's a new thing lol. Thanks for yet another happy video and great recipe! ❤
Yess, I'm early!! Always excited whenever I see a notification from ur channel! 😍😍 Btw, really hope that u can share some useful tips & tricks for making any Turkish pastry/desserts. And more Turkish soup recipes, please! I've really fallen in love with Turkish food💗💗🤩 From ur loyal Malaysian fan.🥰🥰

Looks tasty! I made your Turkish eggs and a variation on your onion cheese pastry for Thanksgiving breakfast and they were a big hit! I love your team too.
This looks like pure joy! I have the larger bulgur in my pantry, and can't wait to make this! I think my little daughters will really love the bread dome...I only home mine is as impressive as yours! Thank you!
