    What I love most about her recipes and overall approach to cooking is the leeway given to each individual ingredient. Plus I didn't realize how completely down-to-earth she is until I actually stumbled across one of her live streams the other week.

    I make Colcannon mashed potatoes often but never thought to make it as a soup! Yummy!

    Here in the uk, I make this after our Sunday roast chicken. I make the stock from the left over chicken.
    Here we add equal part leek and 🥔 as well as a small onion and garlic. Sauté all that together before adding the liquid and pressure cook. If you’re a lover of leeks you will love the white onion addition ❤

    🤤😋🤤😋🤤😋🤤😋🤤😋, on your website does include slow cooker instructions as well. I've been using vegetable stock with most of my recipes, that are mostly vegetables related, and they're more tasty.

    I am Irish, we always make Colcannon with Curly Kale (not Cabbage) and Spring Onions/Scallions(not Leeks), but this DOES look good.

      My grandmother was born in Ireland and she only used green onions to make colcannon. It’s so interesting to hear how it’s made differently from house to house. Curly lake sounds good too!

      @@TheSaltedPepper I guess it'a like any "regional recipe".. they differ. My own Paddy's Day dish will be a Brown Dublin Coddle-can't wait!

      I always use kale in my colcannon too. It seems more like Irish cabbage. I also use scallions and always Kerrygold.

      @@nbenefiel You must be my sister from another Mister LOL - I realised after this video that Louise calls scallions/spring onions "green onions". Why would anyone use other than Kerrygold?

      I freeze potato soup all the time, but without the cream. I add the cream when I reheat it.

    Just saw this video nice job. If you don't have an Emmerson blender can you use a Blender like one of the ninja products and just set the mode to puree ?
