Classic Egg Salad ( also perfect for a keto diet)

    INGREDIENTS:
    8 large eggs
    1 cup mayonnaise
    ¼ cup chopped green onion
    1 tablespoon yellow mustard
    ½ teaspoon paprika
    How to make Classic Egg Salad:
    *Prepare the Eggs:
    Place eggs in a pot and cover with water.
    Bring to a boil. Let it boil for 2 minutes. Remove from heat and let sit in hot water for 10 minutes.
    Drain and transfer eggs to a bowl of cold water with ice. This helps peel the eggs easily.
    Peel and chop the eggs.
    *Mix Ingredients:
    Combine the chopped eggs with mayo, green onions, mustard, and paprika.
    *Assemble:
    Serve the egg salad on bread or with crackers. (skip this step if on keto diet)
