Yes! Many people do make HUGE mistakes when preparing EGG Salad! Like putting sugar in it, or chopped onion, or olives, or relish, or ANYTHING other than just Mayo and salt and pepper!
Tried everything for easy to peel eggs. The only thing that works is to avoid fresh eggs. Get eggs from grocery store a few weeks before making into salad.
I like to make mine sort of a combination between coleslaw and egg salad, sometimes I’ll use chutney instead of green relish for extra spice. I also always use Kewpie mayonnaise.
Your recommendation for cooking perfect hard boiled eggs does not specify if the eggs go into the pot cold from the fridge or bring them to room temperature first.
I take it Martha Stewart doesn't live above 5000 feet. That boil and stand trick only works at low altitude. I find it works a lot faster to steam them. About a centimeter of water in the pot and gently lower your eggs in when it boils. Lid on, lower the temp, so it doesn't mash the eggs around, and set the timer for 10 minutes. Then yes, cold water shock and break up the shells to soak in the cold water.
Shouldn't it depend on the size of the egg? Your answer makes more sense. I was raised on Miracle Whip; didn't taste mayo until 8yrs old...........fell in love with it!! My egg salad is simple: hard boiled eggs, mayo, yellow mustard, garlic salt, black pepper, and paprika.

Any crunchy stuff in egg salad and you will lose a good portion of people. Including me. Raw onions celery or relish will ruin it for me. Spices are a good thing adding the vinegar juice from your favorite pickled item is amazing.
I feel the opposite. I like the onions and celery. Also green bell peppers are good in it. And I despise all pickled foods so pickle juice wouldn't work for me.
Cooking eggs for 13 minutes is wayyy to long! Simmer 5 minutes and run cold water over eggs, crack she'll a bit so the water can get in between the shell and egg and there you go!
Er... I'm sorry, how is it a mistake to have some soft boiled eggs in the salad? What if you like a slightly runnier consistency in the finished product?
I had a friend who put a medium slice of garlic in the middle of deviled eggs, GREAT, I wonder how fresh finely diced garlic would go in egg salad! Mmmm, I must try.
13 mins to boil eggs???? Maybe if they're straight out of the chicken, but in the UK a standard supermarket organic free range egg will be hardboiled in 5mins max.

You can use a rice cooker, too. Put eggs in steamer basket. You can also cook rice at the same time
I never cool my eggs in ice water. Cold tap water works fine.

You betcha! Here in the Pac.NW we use Best Foods mayo. (same as Hellman's, east of Mississippi)

Don't bother trying to peel the eggs. Bread them in two, (after cooking), then dig them out with a spoon. You're going to break them up anyway.
