I was in Japan in 2009 and wanted to try the best unagi restaurant in Tokyo according to Lonely Planet guide... Man that eel was superb.

I wish I could taste grilled Unagi in Japan
Grilled unagi is one of the absolute treasures of Japanese cuisine. And, to see the inner workings of this legendary restaurant was a real pleasure. The technique and skill that goes into that eel is amazing. The only analog that I can think of here in the U.S. is barbecue. Smoking brisket for example. Smoking it, wrapping it to retain moisture, then smoking it some more. Brushing on BBQ sauce...maybe. The process I saw with the eel is similar. Grilling it first, dipping it in water, letting it cool. Then, dipping the eel in that eel sauce before finishing the eel on the grill. But, unlike BBQ sauce, that eel sauce is no doubt a complex concoction that's been used and re-used over a long time...something added onto and left to deepen. In that way, it kind of reminds me of a Chinese "master stock" like the ones used to marinate and stew chicken, duck, and pork parts.

Saya sangat kagum dengan cara kerja orang Japan dalam hal apapun selalu dilakukan dengan serius dan hasil yang berkwalitas, di negara saya Indonesia, banyak makanan yang dijual di restoran, warung, kedai, street food dikerjakan/dimasak dengan asal-asalan, harganya mahal tapi rasanya tidak enak, selain itu dilakukan dengan proses yang tidak higienis & jorok, makanya tidak heran, banyak orang Indonesia terjangkit penyakit dari makanan terutama makanan jalanan (street food)
