if you wanna bring this to another level do it sous vide at 176 for 24 hours, and after reduce the sauce , I added also bay leaves, cinnamon stick and star anise…. incredibly delicious

last time I cook it, it exploded. The sugar formed kind of a layer under the one inch thick oil come out of the fat, and under the sugar is the almost boiling wine. I was trying to stick the meat, then the moment I sticked into the sugar blanket the wine "PONP" making the hot flloating sugar stick on my skin, whitch made 3rd degree burnt at four places while I rushed under the cold water in 5 seconds. The sugar just sticked on my skin. Dont leave your pot even if the LOL updates.
@@rihseb25 It's the correct/authentic traditional way to do it. A lot of cooking is a labor of love and in some dishes, the extra steps / time are needed to develop the flavor. This is true of all cuisines.
@@rihseb25 1 step: cold water in, cooked to freeze the shap and also remove the odor inside the pork by using wine. 2ed steps: Cook the pork with ginger, shallot to move the remaining odor and increase the flavour by adding soy source and other ingredient. Step 3: move the pork into steam, use steam to ensure all the flavour dive into center of the pork, and make pork completely easy for bait(so it wont stick in your teeth). Hope this can help you understand the necessary of all the cooking steps.😁

Based on my experience the two liquid ingredients the video didnt mention are: caremel water mixture and Huangjiu (Chinese yellow wine).
C.X. Tang for dong po rou, theirs no need for Carmel water mixture because Lao chou stain it during 3 hours of cooking.
