There is no flax egg in recipe, so no need to add gelatin. If you skip the sunflower or pumpkin seeds altogether add 1/4 c oil in place of them. If you substitute flour I have no idea how much water you would need to add. Soaking the groats for 2 hours adds an additional amount of water besides what you add to the blender. You’d have to measure how much water the groats absorb during the 2 hour soaking and also add that to the flour in addition to the amount of water listed in recipe.
Can you please touch on your histamine issues. Maybe make a video and foods with explanation of that because I think I'm going through that now. Started aip and started getting hives shortly after. Now im getting allergy attacks and they seem to be coming from things that I have low level allergies to including but not limited to beef, carrot, spinach, plantain, banana, pineapple, lemons but not limes, pumpkin, squash, onions,. Please I need the help its so frustrating. The hives are controlled by my zyrtec but the sneezing and runny stuffy nose is unavoidable sometimes and annoying at work. Had allergies all my life to birch, ragweed, grass pollens, molds, etc but never had these food reactions

Kombucha i think made me flare. Hard to tell if its the food or stressing sometimes. started bone broth recently and limited my food choices to bone broth and 2 veggies and a meat daily so I could ID my triggers easier. And I was eating vinegars at the start of aip. When I first started aip alot of my lesions healed up. I have hs. Then all of a sudden I was getting hives and the boils where getting inflamed again. I tried to pinpoint a trigger and came across hidden yeast sources being a big trigger for hs. So I stopped vinegars and it seemed to help. I have a big yeast issue I think. I use to get yeast infections multiple times a yr. And yeast rashes I finally realized the red dry rash under my armpits and breast area was yeast.

I’m not sure as I can’t tolerate rice. I have used sorghum and the bread was drier and crumbly. Same with lentils and chickpeas. It’s probably worth a gamble but you’ll have to adjust the water as the soaked buckwheat adds extra water to the recipe.

The water content would be much different because this recipe includes water that the soaked whole buckwheat retains. You can use a regular blender for this, it’s soft enough after soaking. If it’s not completely smooth that’s okay too, as long as the baking soda and vinegar are well mixed in
Thank you for this!! I do not get nearly as much a rise as yours (if any at all, to be honest). I use lemon juice instead of vinegar, and pumpkin seeds instead of sunflower. I also add other spices to change up the flavor. I've never had buckwheat at all before this, and I got to say, I am pleasantly surprised........as a tip (so I found out)..... Wash the buckwheat as you would rice, before you soak it, then of course rinse it after soaking really, really well!!! Thanks again for this, you sure are appreciated!!! 🙏💎🌹
Check to make sure your baking soda is fresh and it is well blended. Maybe add a bit extra lemon juice and you should get a better rise. The Pullman pan helps too.

I don’t use flour in the recipe so I’m not sure which ones would work or how much to use. You can substitute an equal part of whole grain sorghum, chickpeas or lentils but the bread is drier. Maybe add 1/4 cup oil to the recipe if you go that route.

The whole loaf will have 2,135 cals, 80g protein, 365 g carbs and 57 g fat If you cut it into 14 slices it’ll have 153 cals per slice, 5.7 protein, 26 carb, 4 fat If you can tolerate unflavored pumpkin seed protein powder you can use that in place of the seeds for a higher protein, lower calorie and fat bread.

Thanks for the recipe . It’s very mushy inside . I had to slice it and bake the slices in the toaster oven at 350 degrees 20 minutes each batch of 4 slices . My Pullman pan has 3 small holes on the base through which the batter was dripping in the oven so I put a parchment paper under the pan (outside) . I put the groats in the strainer after soaking , and tossed it up and down to get the water out . But it still holds a lot of water . Wonder if that’s why my bread is mushy. Any suggestions to make it better . Thanks .
D.O. I made this on a lined baking sheet, I let it raise for 3 hours, then I baked at 350 degrees Fahrenheit, for one hour, It was 2 inches high, it came out to perfection. Blessings

Tried with oat flour (also increased water to 2 3 /4 cup) instead of groats- had to discard the loaf /: super gummy on the inside. I am going to try with buckwheat groats tonight!

You need some healthy fat, I get about 65 g a day from avocado, salmon, sardines, grass fed beef, etc but past that amount I don’t want any extra- it really packs in the calories! I’m definitely not a fan of the ultra low fat craze of the 90s

Are you using a scale to weigh ingredients? Are you using whole groats and not flour? Is your baking soda ( not powder) fresh? Have you made any substitutes to the recipe?
Few things could’ve happened- Did you soak the whole buckwheat groats in water for 2 hours and drain before using? Also, the recipe calls for additional water to be added to the blender with the soaked buckwheat. Using flour will change the recipe a lot, it has to be made with whole groats.

2 hours is long enough to soften it but you can soak overnight and it’ll turn out perfectly!

Hi Stacey, thanks for this yummy recipe! I had forgotten the sunflowerseeds and mixed them under in whole. They turn green, think it must have to do with the bakingsoda. Looks weird🤣. I also mixed in some breadseasoning (fennelseed, caraway, coriander) and its delicious! I will do this again definitely! Greentings from Germany!

Yes, you can use any liquid, even bone broth. Sure, honey would be good in there, maybe 1/4 c.

Tried with oat flour (also increased water to 2 3 /4 cup) instead of groats- had to discard the loaf /: super gummy on the inside. I am going to try with buckwheat groats tonight!

In place of oil, my niece avoided oil and fat and I think that’s what made her get wrinkles at early fifties.
You need some healthy fat, I get about 65 g a day from avocado, salmon, sardines, grass fed beef, etc but past that amount I don’t want any extra- it really packs in the calories! I’m definitely not a fan of the ultra low fat craze of the 90s

The recipe looks great. Would it be okay to use Buckwheat Flour in place of the groats. I’m asking because I have the flour.
You could use 1 lb flour instead but you would have to adjust the water added- use 2 3/4 cups instead of 1 1/2 cups.
I do not have that kind of pan with a lid.
Can I just use foil to cover while baking and does it have to be a metal pan for baking? I have glass only. Thnx.

Are you using whole groats and not flour?
Is your baking soda ( not powder) fresh?
Have you made any substitutes to the recipe?
I followed the instructions completely, but my batter was really thick & I had to spoon it in, whereas yours was pourable.
Few things could’ve happened- Did you soak the whole buckwheat groats in water for 2 hours and drain before using? Also, the recipe calls for additional water to be added to the blender with the soaked buckwheat. Using flour will change the recipe a lot, it has to be made with whole groats.
