- Iguana holds a historic place in the culinary traditions of Mexico and Central America. The ancestral food is still being preserved in coastal Oaxaca today, where it is salted, smoked and stewed with mole amarillo and tucked inside fresh masa and banana leaves for tamales. Traditionally, iguanas were hunted when corn farmers were out in the field. Today, they are a protected species and cannot be hunted while they are in egg-laying season.

Yo probé tamal de iguana en Huatulco y fue un sabor semejante al pollo y con muchísimos huesitos. Prefiero ver a las iguanas vivas alegrándonos con su belleza que verlas en un trozo de masa.

my brother did too but I would also try these.
Very cool. I remember Anthony Bourdain eating iguana and he said it was terrible. I can only imagine them because I had one and they smell terrible.
The iguanas living wild probably differ from ones held in a small enclosure. But they are processed to some extent as well. But, yeah, an acquired taste.
