Prehispanic Mole with Abigail Mendoza

- Let's go back in time to learn how to make this prehispanic mole in a very traditional way. We'll use a metate (precolombian grinding stone) to mill the ingredients without damaging the flavors of each ingredient. Today we cook with a true legend of Zapotecan cuisine, Abigail Mendoza Ruiz, one of the most respected culinary instructors in all Mexico.
It's a blessing to have a Mexican mother. Her food was made with love.
I miss my mothers cooking. My mother is from michoacan, Mexico. She made the green mole with tortillas. Oh my it was heaven sent. My mom passed away in November 2010. I miss her and her homemade cooking. I still love her.

That's the same beautiful lady that was on Pati's Mexican table "Amarillo de mole"! Pre-hispanic, Zapotecan food is the BestI even like how they make their tamales is just like how you do tortillas but you feel it with the mole, boiled chicken and you could put vegetables but on pati's Mexican table she didn't put any vegetables in the inside
Loved this! We did one of our cooking classes in Teotitlan and got to use the metate to grind chilies. It's hard work.

I hate to say this but chickens are not Native to America...hence not Pre Hispanic.
Prehispanic would have used turkey instead of chicken because chicken weren't available before Columbian exchange
