Prehispanic Mole with Abigail Mendoza

  • Let's go back in time to learn how to make this prehispanic mole in a very traditional way. We'll use a metate (precolombian grinding stone) to mill the ingredients without damaging the flavors of each ingredient. Today we cook with a true legend of Zapotecan cuisine, Abigail Mendoza Ruiz, one of the most respected culinary instructors in all Mexico.

    I miss my mothers cooking. My mother is from michoacan, Mexico. She made the green mole with tortillas. Oh my it was heaven sent. My mom passed away in November 2010. I miss her and her homemade cooking. I still love her.

    What a beautiful lady! The metate is a workout, for sure. My abuelita used one to grind corn for tortillas. I'm so happy Abigail is keeping the old traditions alive. Love your channel and really look forward to more new videos. Great job.

    awesome!! I ordered my metate 4 years ago from Mexico and 2 weeks ago I used for the first time andddd OMG that was a lots of work, but definitely the flavor was totally amazing, all the hard work pay off

    I´m mexican chef, and im so fucking proud about people like Abigail Mendoza. She put the mexican gastronomy to the top of the world and makes our traditions an intangible heritage if humanity.

      I grew up eating this mole. It’s my favorite! I’m having a hard time making it but I’m hoping that by watching these videos I’ll eventually get it right.

    I think this stuff looks delicious. I tried it once though and I wasn’t crazy about it. I guess it could’ve been the cook. But it was weird because it definitely looked amazing. I might have to give this another try sometime.

    That's the same beautiful lady that was on Pati's Mexican table "Amarillo de mole"! Pre-hispanic, Zapotecan food is the BestI even like how they make their tamales is just like how you do tortillas but you feel it with the mole, boiled chicken and you could put vegetables but on pati's Mexican table she didn't put any vegetables in the inside

    Original mole didnt have chicken in it maybe Turkey? The Spaniards brought the chicken and a list if other animals/foods from Spain.

    Prehispanic would have used turkey instead of chicken because chicken weren't available before Columbian exchange
