In Episode 4 of MUNCHIES Guide to Oaxaca, host Daniel Hernández heads to Juchitán, Oaxaca, on the Isthmus region of southeastern Mexico. People speak the Zapotec language in Juchitán and enjoy foods-such as iguana, armadillo, and turtle eggs-that are unique to the region. These dishes are prized as customs that locals say go back to before the arrival of the Europeans, even though they involve federally protected species in Mexico. Daniel's guide in Juchitán is Palo, a skilled local cook and muxe (pronounced MOO-sheh). Muxes are a special social group considered a "third gender" in Oaxaca's isthmus.

+Jessica Ni Perhaps, but in common speech, gender and sex are considered one and the same, or when someone talks about gender, they're actually referring to sex - so when they say he/she, they're referring to the presence of male or female sexual organs. The word woman can be used as both sex and/or gender. So technically, the Palo would be a "male woman," or referred to as a man in common speech.

I actually tried iguana when I visited my family in Mexico, but they tricked me they said it was chicken soup and later on they revealed to me it was iguana. It tasted a lot like chicken pretty good, but I wouldn't have it again! Supposedly iguana is good for you, you don't get sick. & I hardly get sick from a cold, etc. They also made tea with the iguanas blood.
