- Contemporary Mexican restaurant Suerte in Austin, Texas makes over 2,300 fresh corn tortillas each day. The restaurant starts by turning 60 pounds of corn into 120 pounds of masa in a process called nixtamalization. The masa is then used to make tortillas, tostadas, and tamales.

1 gallon of water= 8 lbs. So they used 7.5 gallons with 60 lbs of flour. Magic.
yup, nixtamalized corn is really dry; to get a softer texture like you want with a tortilla you need to put a lot of water in it.

Ishata the flour ones can taste very similar to Naan made without yogurt (just flour a little salt yeast oil & water) - corn tortillas are a completely different story lol!
Wasnt aware they did this in austin as well! My fav is at Guisados in LA with them churning out mini tortillas all day to get my mini sampling platter of 6 diff tacos 🤤🤤🤤

You need to travel more and enjoy street food. There is a difference between fine dining and real food. Maybe you're a server with a health card, or might even have a culinary degree, but learn to appreciate the effort they put into making good food. Just in case you're wondering; I have 10+ years of experience in Vegas fine dining restaurants and have been to 13 countries.

@@whatsunique I’ve traveled to (like, move for a couple years) to ALOT of countries. Currently 5th year in Japan atm. Anyways Idm if food is made like this in other countries but this video in particular is located in the US where high expectations for sanitation measures are expected, you know? In a way, it’s the American culture to expect that that and should be respected. I’m sure ppl who care about this stuff would choose not to travel, perhaps just like the person you were replying to.

What is the calcium oxide for? Where can you get the corn? I want to try this at home
I think he meant Calcium hydroxide. It’s basically used to help get the skins off the corn while also making it taste better and create mass in the first place ( just boiled corn and water will not form masa as it won’t stick together nor taste right ) u can get various types of field corn online , I recommend Masienda as one . Or even eBay . ( if u don’t want to use Calcium hydroxide u can also use hard wood ashes , I prefer ash for colored corn ( especially red since it often gets to black if u over do Cal ))

Most of the Masa was prepared near the ground and Executive Chef Fermin Nunez's bracelets kept soaking in with the Masa, this is pretty disgusting and unsanitary, I wouldn't consume anything here.
