What I am not sure about is whether the GH5s needs and RSS cable or whether the included multi USB cable will drive the time lapse etc. - basic stuff but no info on this anywhere I can find

I was in doubt, I need to configure on camera the shooting of the photos? Or the Ronin S app does the shooting. I did the test and mine did not shoot, only the rotation.

My app - on Android - looks very different to this and so far the pattern that the Ronin is moving through makes no sense. The camera is just pointing to the ceiling for the first shots. Any thoughts?

I was in doubt, what happens to the photos, go to the app, and it joins the photos in a panorama, or they get separated and you have to join in the photo program?

Seperated. You need lightroom or photoshop to merge.
