How To Make Antiguan Style Ducana!!!

  • Hey Guys,
    Its another exciting episode of Our Antigua Kitchen! In this episode, we bring you one of Antiguan's most popular dishes i.e Ducana!! We received a few requests for this one, so we are glad to bring you this recipe as a tribute to our recently departed grandma who taught us to make this dish.
    Here are the Ingredients you will need for this recipe : `~~~
    1 cup of grated coconut
    1 cup of grated sweet potato or yams ( in America)
    2/3 cup of white sugar
    1 2/4 cups of white flour
    1 tsp Ground ginger
    1 tsp Nutmeg
    1 tsp Almond essense
    1 tsp Vanilla esence
    1/4 cup of water
    Equipment ~~~
    Sea grape leaves
    Aluminum foil
    Large mixing bowl
    Wooden spoon
    Large Pot for boiling

    My mother showed me how to make ducana before she passed away... one day I'll do it, and hopefully I'll remember how, but I definitely prefer to use the grape leaves, or I remember using banana leaves tied with string... it's more tender as you said.
    By the way, the young lady has such a lovely smile... very beautiful!😍

    I fell in love with Ducana when I visited Antigua about 5 years ago. I ate it like almost every day.

    In Montserrat it's done in Banana leaves. Don't even mention the word YAMS, it's Sweet Potato. Those people refuse to learn the difference and we who know different should not encourage them. A yam and a sweet potato are 2 different things.

      Bonita Weekes true ! 😂 sweet potatoes in the states is orange I didn’t want these people making orange ducana. We won’t be blamed for that. Lol

      Banana leaves were what my Antiguan grandmother also used.

      In American states other than New York, you can get our sweet potatoes at Whole Foods. They call it Japanese sweet potatoes.

      We cooked it wrapped in both sea grapes leaves and banana leaves here in Antigua to. I prefer the banana leaves.

      I’m in dirty Bronx Ny so I can’t find ingredients. All the Caribbean store is real dirty smh. Not like back home for me.

    Hi very nice content you know what I would like to see is local farmers maybe a vlog on your way to buy local ingredients and distributors in half Antiguan but when I come home I only shop in malls I want to get to know Antigua local style a lil more my condolences. I lost my great grand during this covid couldnt even travel and airline bankrupt no idea how ill travel from Guadeloupe to Antigua so it really touch my heart to hear your accent and the dishes 😻

    The traditional rapping for ducana is banana leaves. If you can't get the banana leaves, we use grape leaves. I'm from the old school, thanks for sharing our coulture.❤😂

      You can also use wax paper with the foil paper as substitute for the grape leaves or banana leaves

    Can you plz show how to prépare cactus ? I would like to try it. When I was back home in small island, I used to put cactus in water and drink it

      Once the prickles is removed they are cut in Julian and put to boil in regular temperature water until cook , strain the water from it and sprinkle black pepper over them

    This is misleading. Only Antigua makes ducana, and it's made in fig or banana, or grape leaves. Never heard of Montserrat doing ducana, even by another name. It's like in Antigua it's cow heel soup, but Jamaica it's bull foot. In Antigua is fungi, but in Barbados, it's called coocoo. Ducana is Antigua only.

      Sorry. Jamaicans call this blue draws. We Antiguans are not the only one. Let’s not act like Jamaicans and put Arwee name pun everyting. All Caribbean make it with slight variations.
